Puff pastry

Puff pastry, also known as pâte feuilletée, is a delicate and flaky pastry made from laminated dough consisting of two main components: the dough (détrempe) and butter or solid fat (beurrage). This pastry is created by enclosing the butter within the dough, resulting in a paton that is folded and rolled repeatedly before baking.

During the baking process, the water within the pastry dough turns into steam, causing the gaps between the layers to expand and give the pastry its characteristic flakiness.

The puff pastry has roots in both France and Spain, but the concept of layered pastry has been used for centuries by Arabs and Greeks, akin to Greek phyllo pastry. They create thin sheets of dough coated with olive oil and employ them in various pastries like baklava.

The production of puff pastry can be time-consuming, as it requires maintaining a specific temperature of around 16 °C (60 °F) to prevent the shortening from melting and resting periods between folds to allow gluten strands to develop and maintain the desired layers.

Puff pastry can be paired with almost everything, from fruits, vegetables, and all types of meat. Not only that but you can also prepare it by using all sorts of cooking and baking materials for it is so easy to form in any shape and style of your choice.

This particular recipe is definitely one for the books not only because it’s yummy to both eyes and tummy. What made it an amazing recipe was that it’s made possible by using something that’s often neglected in the kitchen.

It’s none other than empty egg cartons.

  • 1 puff pastry sheet
  • 10 strawberries
  • 1 bar of milk chocolate
  • 1 egg
  • ½ cup cream cheese
  • caviar of 1 vanilla bean
  • 1 tbsp honey
  • 1 whisked egg for the egg wash

Step 1: Lay an empty egg carton open on top of a flat surface (most likely your kitchen counter) and put a sheet of puff pastry on top of it. Make sure that the puff pastry covers the entire egg carton because you will use the excess parts for later.

Step 2: Put 2 to 3 inches deep digs in the puff pastry using an egg by basically just following through the egg dimples on the carton itself. Then after that, crack the same egg open and add it to the half cup of cream cheese. Don’t forget to add caviar of 1 vanilla bean and 1 tablespoon of honey.

Whisk the ingredients together until the mixture becomes thick and foamy.

Step 3: Put a decent amount of the cream cheese mixture into the puff pastry dimples and top each with a strawberry. Next, grab the milk chocolate bar, put it on the other half of the puff pastry, and flip the chocolate bar side to put all ingredients together, sealing them at the same time.

Step 4: Flip the entire pastry puff, put it on a baking tray with parchment paper, and oven-bake it at 350°F for 45 minutes.
