Cook a delicious chicken crockpot dinner in a few simple steps

The pandemic has forced more and more people to cook from home, which means we need all the delicious recipes to make.

If you’re like me, the simpler the better, as long as it tastes good. Lucky for you, we’ve got an easy recipe that will have all your guests asking “how did you cook that?”

This is one recipe you’ll just have to share!

Make this mouth-watering chicken dinner using just a crockpot, and these simple steps.

When it comes to cooking, sometimes the best dishes end up being the easiest. That’s the case with this scrumptious chicken dinner, and you won’t believe how simple it is.

First things first, get to the store to get these ingredients.

In order to make this amazing crockpot dinner, you’ll need to get these items at your local grocery store:

  • 2 lbs of chicken, be sure to get boneless, skinless breasts
  • 1 lb of red potatoes
  • .5 lbs of carrots
  • 1 tsp of dried oregano
  • 1 tsp of onion powder
  • 1/3 cup of freshly squeezed lemon juice
  • 1/4 cups of olive oil
  • 2 tsp of crushed garlic
  • 1 tsp of salt
  • Freshly cracked black pepper

Now that you have your ingredients, you can start the preparation process!

Step 1: Making your marinade

Take your 1/4 olive oil and put it in a measuring cup or large bowl. Mix in your 1/3 cup of freshly squeezed lemon juice, followed by the teaspoon of oregano, onion powder, two teaspoons of crushed garlic, a teaspoon of salt, and a little bit of freshly cracked pepper. After stirring, you have your marinade.

Step 2: Putting chicken and veggies into the crockpot

Now that you’ve got your marinade mixed and ready, it’s time to start putting everything into the crockpot. First, place your 2 lbs chicken breast into the slow cooker, followed by your red potatoes(cut them up first) and carrots. See the picture above for what is should look like.

Side note: To ensure the most tender chicken, be sure to cut off the excess fat before placing it into the crockpot.

Step 3: Pouring your marinade into the crockpot

Once you have your chicken, carrots, and red potatoes into the crockpot, begin pouring your marinade into it. Make sure to completely cover everything with the marinade. Once the marinade is in, you can start the cooking process.

Step 4: It’s time to start the cooking

Now that your preparation is done, and your ingredients are in your crockpot, it’s time to turn it on and start cooking. Depending on how much time you have, there are two different ways to cook this meal.

If you’re in a pinch for time and need to have it ready in a jiffy, put your crockpot on high and cook for 4 hours straight.

If you’ve got plenty of time, you can put your crockpot on low and let it cook for 8 hours straight.

Whatever you do, DO NOT remove the lid from the crockpot until finished.

One Pot Chef suggests never removing the lid when cooking this meal in your crockpot. If you do, the steam that you’re using to cook it will be released and it may not cook right.

Once you’ve cooked on high for 4 hours, or low for 8 hours, it’s time to eat! You can serve this directly from your crockpot and will be able to feed approximately 4 people with this simple recipe.
