Side dishes usually aren’t overly spectacular, but this slow cooker recipe for a great cheesy corn casserole with jalapeños is something you really have to try for yourself. It will only take you a few minutes of preparation time, it’s extremely easy to make and it’s just perfect and quick comfort food. The mix of the vegetables with the creamy solution of melted cheese truly makes for a great and refined taste.

Before we get started, let’s take a look at the ingredients.

What you’ll need

  • 5 (15.25 oz.) cans of whole kernel corn [$5.45]
  • An 8 oz. package of shredded sharp cheddar cheese [$3.99]
  • An 8 oz. package of cream cheese [$1.89]
  • 2 jalapeños [$0.19]
  • ½ tsp. pepper
  • ¼ tsp. salt
  • ¼ tsp. onion powder

You can use a regular 4-quart cooker for this recipe, but feel free to use larger slow cookers as well. The ingredients above will provide for 10 servings and you’ll only need about 10 minutes of preparation time. The corn casserole has to cook for two hours in the cooker, which makes for a total time of 2 hours and 10 minutes. The cheesy corn casserole recipe is both simple and inexpensive with an average cost of only $1.15 per serving.

Cooking instructions

The instructions for this slow cooker corn casserole are extremely simple.

First of all, add all of the corn to the slow cooker. Next, add the shredded sharp cheddar cheese and diced jalapeños. Be sure to remove the seeds of the jalapeños before chopping them. Spice things off with onion powder, pepper, and salt.

Cut the creamed cheese into little cubes and add them to the slow cooker as well. Don’t mix them with the rest of the ingredients, but leave them at the top. This will allow the creamed cheese to melt, which makes it a lot simpler to mix afterward.

Set the slow cooker setting to “high” and let it cook for two hours.

After these two hours, stir the entire corn casserole well and a creamy sauce will begin to form thanks to the melted cheese. If you’d like, you can serve with a bit of diced jalapeños on top.
