Start by slicing and sauteing 1 onion.
Drizzle some olive oil into the pan and add your onions. Stir to coat.
Peel and slice 4 potatoes.
Add the potatoes to the pan.
Sprinkle some salt and pepper and stir.
Cut 3 chicken breasts into chunks.
Cube the chicken breast and add some additional salt and pepper to taste.
Add seasoned chicken to pan.
Place the chicken pieces directly on top of the potatoes and onion.
Pre-heat oven to 390℉
Whisk 2 eggs in a bowl.
Add 200 ml of heavy cream and blend.
Add 1tsp of curry powder.
This recipe calls for a tsp. of curry powder, which adds a bit of color and delicious flavor.
Mix until combined.
Stir the egg, cream and curry powder together until smooth.
Add the mixture to the pan.
Pour the egg/milk mixture evenly over the chicken.
Cover pot with foil, bake 40 minutes.
