These Cheesecake Cookie Bars Will Blow You Away

Do you have a favorite dessert recipe? Though it goes without saying, there are plenty of delicious dishes to choose from. Many of us are probably partial to chocolate chip cookies that our mom made for us when we were little. On the other hand, maybe we prefer something a little fancier like a chocolate cake or an apple pie. While it’s all delicious, sometimes we still want a dessert dish that’s a little more new or unusual than we’re used to. If you think you’ve had it all, you probably haven’t had the recipe we’re discussing today.

Sometimes all it takes to inject some new life into a dish is to cross it with something else. That’s why today we’re going to make these delicious chocolate chip cookie cheesecake bars. As the name suggests, it’s a perfect cross between your typical homemade cookie and a creamy cheesecake. Once you’ve tried these, you’ll come back to them again and again. So let’s get started.

Here’s what you need:

  • 1 18 ounce roll of chocolate chip cookie dough
  • 8 ounces of softened cream cheese
  • 1/2 cup of granulated sugar
  • 1 room temperature egg
  • 1/2 teaspoon of vanilla extract

Here’s what you do:

1. Before anything else, preheat your oven to 350 degrees and line a nine-inch baking dish with some parchment paper. Next, open up your roll of pre-made cookie dough and spread a little more than half of it into the bottom of your baking dish. Make sure to press down firmly on it to make an even layer!

2. After that, beat your cream cheese in a bowl with a hand mixer or a stand mixer until it becomes light and fluffy. Add in your egg and your vanilla extract and keep mixing everything up until it’s smooth.

3. With your filling ready, pour the cheesecake filling on top of the first layer of cookie dough you pressed down earlier. Next, break the rest of your cookie dough into chunks and sprinkle it around the top of your dish.

4. Now that your dish is fully assembled, pop it in the oven for 30 to 35 minutes. When the time is up, check to make sure it’s cooked all the way through and let it cool off before you cut it into bars. When it’s cool enough, eat one with milk and keep the rest in an airtight container in the fridge!

As you can see, this recipe is very straightforward but it adds a whole new dimension to the classic chocolate chip cookie recipe. While the instructions above say to simply use store bought dough to make everything a little easier, you can definitely customize this recipe by making your own family recipe for chocolate chip cookies and using that resulting dough instead.

If you want to add even more flavor and texture to this recipe, you can also experiment with the kind of cheesecake filling you use in your recipe. While the plain cheesecake is the standard flavor, you could also add blended strawberries or raspberries into the filling to give it all another pop of flavor.
