These Cheesy Asparagus Spears Are A Perfect Lo-Carb Dish

If you’re ever on a low-carb or keto diet, sometimes it’s hard to find recipes that fit the guidelines and still taste delicious. Although it’s easy enough to eat only vegetables with some light seasoning, finding a veggie-heavy dish that still tastes delicious can be tricky. Fortunately, we have a delicious recipe which offers the best of both worlds and takes absolutely no effort to throw it all together.

Although we don’t use asparagus all that often in our recipes, this dish is a delicious alternative to some of the other low-carb dishes you might be used to having. Today, we’re going to make an amazing cheesy garlic baked asparagus dish with only a few simple ingredients. By just throwing these ingredients together, you’ll have a delicious and guilt-free side dish in no time. So let’s get started.

Here’s what you’ll need:

  • 1 pound of asparagus spears
  • 3 tablespoons of oil
  • 1 tablespoons of minced garlic
  • 3/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 1/4 cups of shredded mozzarella

Here’s what you do:

1. To get started, make sure your oven is preheating to 425 degrees. Get out a baking sheet and spray it down with nonstick spray as well. Once that’s done, prepare your asparagus spears by snapping off the hard ends and arranging them on your baking sheet.

2. After that, get out a small bowl and mix together your olive oil, salt, pepper and garlic. Stir everything up until it’s well-combined and then drizzle that mixture over your asparagus. Roll or toss the spears around somewhat until they’re all evenly coated as well.

3. Once that’s done, pop the baking tray in the oven to bake for about 10 to 15 minutes. At the end of this process, the spears should be a little brighter in color and just on the verge of being tender.

4. When that time is up, take them out of the oven again and top the whole thing with your mozzarella cheese. Put it all back in the oven and keep cooking it until the cheese melts and starts to turn golden brown, which should take about four to five minutes.

5. Finally, take the baking tray out again when it all looks good and season with some additional salt and pepper as necessary. Be sure to serve it immediately and enjoy!

As we said, this recipe uses incredibly few ingredients and combines them in a simple way that anyone can enjoy. Still, the end result is a low-carb, veggie-heavy dish that still tastes amazing and can fit into a wide range of diets. Even if you don’t use asparagus in your cooking very often, this recipe is definitely worth a try.

If you’re trying to avoid clean up, you could also put a sheet of aluminum foil on your baking tray before loading it with veggies and cheese, just be sure to spray it down as well to make it non-stick. Once you’re comfortable with this, you could also add some additional Italian seasoning if it suits you or add some other ingredients!
