These Caprese Stuffed Avocados Are A Great Appetizer
This combines avocado with some Italian flavor for an ideal party meal.

It seems that avocados have been on the world’s mind lately. One the one hand, avocado toast has been blamed as the reason why millennials can’t afford to buy real estate. On the other hand, they’re gotten more positive attention from being included in a variety of diet recipes. Chocolate avocado pudding anyone? The one thing we’ve learned for sure is that the avocado is much more versatile than we might’ve expected. It has way more uses beyond a simple guacamole, at the very least.

With that in mind, today we’re going to make a delicious recipe that blends the avocado with a more traditional Italian appetizer you’ve probably had before. If you already know about how delicious balsamic vinegar can be with tomatoes, you probably know where this recipe is going. Today, we’re making caprese stuffed avocados which you can serve as a delicious and healthy finger food at your next party. Even if you’re a fan of caprese in general, we bet you’ve never had it quite like this before. Let’s get started.

Here’s what you’ll need:

  • 1/2 cup of grape or cherry tomatoes, halved
  • 4 ounces of baby mozzarella balls
  • 2 tablespoons of basil pesto (homemade or bought)
  • 1 teaspoon of minced garlic
  • 1/4 cup of olive oil
  • 2 ripe avocados
  • 2 tablespoons of balsamic glaze
  • 2 tablespoons of fresh chopped basil
  • salt
  • pepper
  • additional fresh basil leaves (optional)

Here’s what you do:

1. First, begin by getting a big bowl and combining your tomatoes, mozzarella, pesto, garlic, olive oil, salt and pepper. Toss the bowl and mix everything up until it’s evenly combined. In the meantime, prepare your avocados by peeling, seeding and halving them as well.

2. Get a plate out and arrange your halved avocados around it, garnishing it with your optional fresh basil leaves as well. After that, get a spoon and add some caprese filling into the middle of each avocado half where the pit used to be.

3. With everything in place, get out your fresh basil and finely chop it up. Sprinkle it on top of your avocados and glaze it all with balsamic dressing as well. Season it with salt and pepper to taste and you’re ready to eat!

While this recipe is relatively easy to make, the results are a delicious and aesthetically appealing dish that is a perfect addition to any outdoor parties you may be planning on having. While this is a little bit of an unusual recipe compared to the typical burgers and hot dogs we may be used to having at grill outs, a little additional Italian food never hurt anybody! On the other hand, these avocado halves also work perfectly as a mid-day snack or meal replacement, packed as they are with healthy fats and veggies.
