Actually, for those who don’t know it yet, zucchini is sometimes referred to as courgette and is a type of summer squash. It is technically a fruit and it is usually served cooked.

It can also be used as an ingredient in baked goods- especially in a sweet bread.

Now that we’ve heard about zucchinis, let’s talk about the real star in this recipe- Blueberries!

This fruit belongs to the berry family (obviously) and is a good antioxidant. Blueberries will surely give each bite of your zucchini bread juicy bursts of goodness that everyone will love- and crave again and again.

Are you ready to make your own Blueberry Zucchini Bread?

We thought so!

This recipe is easy and it doesn’t need any mix-ins. It’s the type of bread that will give your tastebuds just the right sweetness without overdoing it.

Imagine baking this for your family or friends- you’re not only giving them a delicious treat, but you’re also packing them with many vitamins and minerals. Getting healthy never tasted this good!

Get set with this recipe. Below is a list of its ingredients.

  • 1 large egg
  • 1/3 cup canola or vegetable oil
  • 1/2 cup light brown sugar, packed
  • 1 cup all-purpose flour + 1/4 cup for tossing with blueberries
  • 1/4 teaspoon salt, or to taste
  • 1 cup coarsely grated zucchini
  • 1/2 teaspoon baking soda
  • 1/4 cup sour cream
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1 tsp. cinnamon (optional)
  • Β½ tsp. ground nutmeg (fresh is best, also optional)
  • 2 teaspoon vanilla extract
  • 1 cup (6 oz) fresh blueberries

Are you ready? Now let’s get this started!

1. Preheat your oven to 350F. Lightly grease a 9 x 5″ loaf pan and dust with flour, or use a light coating of cooking spray, then set the pan aside.

2. In a large bowl or any decent container, whisk together the egg, sugars, vanilla, oil, and sour cream.

3. After that, add in all of your dry ingredients EXCEPT the zucchini, blueberries, and ΒΌ cup of flour (for dusting blueberries). Gently stir to combine the ingredients, but make sure not to over-mix the batter.

4. Next, mix in your zucchini

5. Toss the blueberries in the remaining flour to get a nice coat on them. This will help them stay afloat in your bread loaf as it bakes, rather than sinking to the bottom.

6. Gently fold the blueberries (along with any small clumps of flour) into the batter, still being careful not to over-mix.

7. Carefully pour your prepared batter into the pan and smooth out the top lightly with a spatula. Plop a few extra berries on top for visual appeal.

8. Lightly sprinkle the top with some fresh ground nutmeg

9. Bake between 55 to 60 minutes or until the crust sets, the top is golden, and the trusty old toothpick comes out clean. Baking times may vary, so keep your eye on the bread. Also, your nose will let you know when it’s getting close to being done.

Zucchini Blueberry Bread . 1 large egg 1/2 cup light grown sugar 1/3 cup vegetable oil 1/4 granulated sugar 1/4 cup sour cream (or Greek yogurt) 1 tsp vanilla extract 1 1/4 cup whole wheat flour 1/2 tsp baking soda 1/2 tsp baking powder 1/4 tsp salt 1 cup grated zucchini 1 cup (6 oz) blueberries . 1. Preheat oven to 350 degrees. Spray bread pan with coconut oil and sprinkle with flour. 2. In a large bowl, use a whisk to combine first 6 ingredients (through vanilla). 3. Add 1 cup flour, baking soda, baking powder, and salt. Stir with spatula until just combined. Do not over mix. 4. Add zucchini and stir until just combined. 5. In a small bowl add 1/4 cup flour to blueberries. Ensure they are coated. 6. Fold blueberries into large bowl mixture. Do not over mix 7. Pour mixture into bread pan. 8. Bake for 50-55 minutes or until golden brown and toothpick inserted comes out clean. Let cool for 10 minutes. 9. 10. Finally, allow the bread to cool in the pan for roughly 20 minutes before flipping out and slicing up.

Note: Incorporating fresh ground nutmeg into the mix and giving it a light sprinkle to the top of the bread will give it an added depth of flavor that will make your tastebuds sing. It’s a secret twist just intoxicating enough to make it everyone’s favorite new quick-bread recipe.
