This “Beef Tortilla Pie” recipe from One Pot Chef Show is inspired by the mix of Italian and Mexican flavors.
Tortilla Pie is also known as Pastel Azteca.
This Mexican dish, known as tortilla pie, is a traditional food prepared using corn tortillas.
It is composed of alternating layers of tortillas and fillings made of salsa, chili pepper, corn, cream, cheese, and meat. The meat can either be chicken, pork, or beef.
As the One Pot Chef explains:

What makes up a tortilla?
A tortilla is a thin flatbread that can be made using wheat or maize flour.
Tortillas made out of maize tend to be brittle. On the other hand, wheat flour tortillas are soft and chewy.
For this recipe, tortillas from wheat flour would suit better.
To start making the dish, you will need the following ingredients.
- 4 tortillas
- 2 tablespoons of olive oil
- 500g lean ground beef
- 1 diced brown onion
- 2 crushed cloves of garlic
- 1 deseeded and diced small red bell pepper
- 125g drained can of sweet corn kernels
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 400g can of diced tomatoes
- salt
- 2 cups of grated cheddar cheese
After preparing everything you need, it will only take 30 minutes to cook up this yummy snack.
First, heat up a frying pan and add olive oil.
Throw the diced brown onion and garlic into the pan.
Cook over medium heat until the onions soften.
Once done, add the ground lean beef. Lean meat is better for this recipe to avoid having a greasy dish.
Break all the meat lumps using a spatula. Continue cooking until the meat turns brown.
Next, add in the diced and deseeded bell pepper.
After that, put in the corn kernels. The contrast of colors between the bell pepper and corn makes it even more mouthwatering.
To make the dish spicy, sprinkle a teaspoon of paprika and some chili powder.
You may use a mild or hot chili powder, depending on your preferred spicy level.
Give the mixture a nice stir to even out the flavor. Then, continue cooking for another two to three minutes or until the bell pepper softens.
Place diced tomatoes into the mixture and mix it afterwards.
Reduce the temperature and allow to simmer for five minutes.
Once the mixture thickens, season with a dash of salt to taste. Stir in the filling before turning off the heat.
Set aside to cool for about ten minutes. While waiting, prepare a springform pan and place it on a tray.
Assemble the layers of the pie by putting a tortilla at the bottom.
Then, place one-third beef mixture on the tortilla. Sprinkle some grated cheese over the mixture.
Repeat the process of assembling until it contains three layers of beef and four layers of tortilla.
Top it off with grated cheese before placing it in the oven.
Preheat the oven to 190 degrees Celsius (375 F.) for 20 minutes and wait until the cheese on top melts.
Leave it to cool for at least five minutes to let the tortilla firm up a bit.
