If “Point A” is me, and “Point B” is happiness, there’s no faster way from Point A to Point B than a bowl of crispy fried chicken. Something about the classic mix of ingredients bringing spice, flavor, and grease together to create instant joy on the plate just cannot be beaten.
Of course, one brand of chicken by one notable Colonel has something of a monopoly of Southern fried chicken.
…That is until you try this “KFC” recipe by YouTube cooking channel “Samiullah food secrets”. Scoring over 13 Million views (you read that right!), this recipe doesn’t try to replicate the franchise’s famous “11 herbs and spices” chicken recipe but rather takes a different approach to get a result you’ll want to stay home to make.
Here’s what you’ll need:
For the chicken:
- 1 tbsp salt
- 1 tbsp baking powder
- white vinegar
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp red chili
- 1tsp tumeric
- 1 tsp black pepper
- soy sauce
- chili sauce
For the coating:
- 2 cups white flour
- 1 tsp salt
- 1 tsp red chili
- 1 tsp garlic powder
- 1 tsp baking powder
- 1 tsp chicken powder
- 4 eggs for the wash if preferred
Now, let’s get kickin’ making our chicken!
Begin by scoring your pieces of chicken with shallow cuts. This will help the next step to permeate the meat and draw out moisture. It also allows the marinade to really soak in later. Next, dowse the chicken with a few decent lashings of white vinegar.
Sprinkle about a tablespoon of salt over your chicken.
Next, do the same with baking powder. These are the tricks of the trade that give you that extra crunch and texture when it comes to frying. Mix the chicken well with these ingredients, then rest covered in the fridge for one hour.
The next step is fairly obvious…
Remove the water from whatever container you’re using. This liquid that has been drawn out will mean that our chicken crisps up beautifully on the surface, as the meat stays tender.
Now bring on the flavor!
Once your chicken is drained of the liquid, comes the first injection of flavor. Throw onto your chicken the garlic and ginger paste. Next, sprinkle over it the red chili, turmeric, and black pepper. This recipe calls for a lot of chili, but if you’re afraid of the heat, simply hold back on the chili powder and chili sauce whenever the recipe calls for it.
Get saucy.
With all the spices on your chicken, it’s time to add the sauces. Give a few healthy lashings of chili and soy sauce. Mix all of your chicken well with the spices until every inch is thoroughly coated and all of the flavors are integrated.
Rest for another hour, covered in the fridge.

Mix the white flour, salt, red chili, garlic powder, baking powder, and chicken powder to form the coating. Prepare a large bowl with your eggs and mix them all together to use for your wash, although this particular recipe uses a bowl of water.
Two coats are better than one.
Double coat each piece of chicken by coating it in the flour, then dipping it into the wash, and again in the flour. After the second coat, your chicken should have a nice thick layer of batter over it.
Get a pan or pot of oil nice and hot and ready to fry just be aware that if it’s too hot your oil (and your chicken) will burn. Make sure the level of your oil is high enough that you can mostly submerge your chicken.
Gently lower the chicken into the oil and fry until cooked through.
This can take a watchful eye, but the rewards are certainly worth it. If your chicken is not fully submerged, you may need to turn the piece of chicken over to complete cooking.
