Have you gone apple picking yet this season? If you have, then you probably ended up with more apples than you know what to do with.
If you’ve already turned some of those apples into pie and strudel, then you might want to try this apple cake recipe next.
According to Home for the Harvest, the best time to go apple picking is in September. You’ll want to immediately use any apples that are bruised or have visible decay. These apples won’t store well. Apples that are going to be eaten right away can be stored in a bowl on the counter for a few days.
It’s best to put the rest of the apples in the crisper drawer of your refrigerator, according to Taste of Home.
This delicious apple cake is so simple to make and is perfect for breakfast or as a sweet treat.
This recipe will definitely be added to your go-to dessert recipe list. First, you’ll mix up your wet and dry ingredients.
Then you’ll pour your batter into a greased and floured mold.
After slicing up your apples, you’ll stand them up in your batter.
Sprinkle with sugar (you can add some cinnamon if you like) and bake for 45 minutes and you’re done! It’s that easy and even more delicious. Let’s get started!
Ingredients:
- 2 large apples (you can also use 3 small ones)
- 3 eggs
- 150 g of sugar
- a packet of vanilla sugar
- 125 g of plain yogurt
- 70 ml of sunflower oil
- 1 tbsp of lemon juice
- 230 g flour
- an 11g sachet of baking powder
- a pinch of salt
- 1 tbsp for of sugar for decorating
- a few pats of butter
Directions:
Step 1) Pour your eggs into a bowl.
Step 2) Toss your sugar into the same bowl with your vanilla sugar and whisk until well combined.
Step 3) Pour in your yogurt and oil and whisk until combined. This is what is going to give you a nice moist consistency.
Step 4) Mix your lemon juice in.
Step 5) Pour in your flour, baking soda, and salt and whisk until you have a thick and smooth batter without lumps.
Step 6) Now, it’s time to slice up your apples. You can leave the skin on or off depending on your preference. If you want them to have a nice uniform look, first cut your apples into two pieces and then core your apples before slicing them up.
Step 7) Grease your cake pan with butter and sprinkle flour over it before you pour your batter in.
Step 8) Slide your apple slices lengthwise into the batter on alternating sides so that the slices stand up.
Step 9) Sprinkle some sugar over the top of your apples so they caramelize when they bake. You can also sprinkle some cinnamon for extra flavor.
Step 10) Toss a few chunks of butter on top of your apples.
Step 11) Bake for 45 minutes at 170°C
