Alvin Zhou is one of Tasty’s producers and is a certified food enthusiast. No wonder he is known to create delicious foods that both tasty and beautiful.
Last February 08, 2021, Alvin posted a video that gained more than 5 million views because of its impressive score and cinematography.
The video was about his 72-hour beef wellington recipe.
Yes, that’s the famous and stunning meat dish that Gordon Ramsay adores. For Gordon, tasting a chef’s version of Beef Wellington will pretty much tell him what he needs to know.
This recipe requires the chef to use different cooking techniques and incorporate them all in one dish. If a chef can make a good Beef Wellington – then he’s a brilliant chef.

Here’s Alvin Zhou’s 72-hour Beef Wellington.
Thursday, 8:00 am.
Alvin shows off a beautiful cut of beef that he bought from Costco. According to him, it was on sale, and he got it for himself as a birthday present.
He sprinkled salt and made sure that every part of the tenderloin was coated with fine salt. He promised to take good care of it as he gently wrapped it to give it that round shape.
He took a clean towel and started wrapping the beef. According to Alvin, it was like swaddling a baby.
He then placed his “Baby Wellington” inside the fridge to rest for 48 hours. This should give the beef enough time to absorb the salt.
The next step was to make the duxelle.
He finely chopped the shallots and then the mushrooms. Then, he melted some butter, and next, he poured in the mushroom and shallots. Seasoned them with salt and pepper and sautéed them until it was thick as a paste.
He was even able to watch Attack on Titan while waiting for two hours.
According to Alvin, the duxelle’s flavors grow over time that’s why he covered it with saran wrap and placed it in his fridge, along with the beef.
Saturday, 1:00 pm.
Alvin unwrapped the beef and seared it. Then, he placed it on his chopping board layered with saran wrap. He then gently brushed a nice coat of mustard yellow.
After enveloping the beef with the savory yellow color, he added a touch of black pepper. He covered it with saran wrap and a towel once more to ensure that the cut of beef absorbs all those flavors.
He placed it back in the fridge and took the bowl of duxelle out.
Alvin headed back to the kitchen and sprinkled flour onto his chopping board. Instead of crepes, he used Chinese hand grab pancake dough. He flattened it and then placed it on a saran wrap.
He took a plate of Prosciutto and gently layered them in the dough. Next, he equally distributed the duxelle and flattened it. Gently, he placed the cut of beef and slowly rolled them together.
Back to the saran and towel wrap for this beautiful cut of beef.
Saturday, 11:00 pm.
The snow is falling, everything was peaceful. Alvin took his favorite wine and poured himself a glass. While enjoying it, he poured the rest of the wine into a pan to make his signature wine sauce.
For an hour, Alvin waits for the beef stock and red wine to reduce. He decided to enjoy his wine and play the piano as he waits.
When he came back, his kitchen was filled with a tempting aroma. It was time for the next step.
He mixed butter with flour and then pours it in his sauce, thickening it in the process, then sets it aside.
After a few minutes, it’s time to put it back on the stove. He adds more butter because according to him; butter enhances the wine’s taste.
Soon, his elegant sauce resembles melted chocolate. He strains it and sets it aside for the big event.
Sunday, 10:00 am. It’s time.
Alvin woke up feeling happy because it was a snowy day, the perfect day to enjoy his Beef Wellington.
He started working on his pastry, the hero of this dish. Like a plain canvass, he gently brushed it with a mix of egg yolk and milk.
He wrapped the beef around the pastry and then sealed it with the saran wrap once more. Then, he prepared another sheet of pastry dough and used a crisscross cutter for its design.
Next, the crisscross dough embraced the Beef Wellington, completing the long process of preparation.
Now, the final part of the video shows the beautifully cooked Beef Wellington.
The meat has been perfectly cooked, and the filling inside looks so delicious. Of course, the pastry looks stunning as well.
Alvin finally enjoys his meal.
