Combine these 5 simple ingredients to make the best homemade peppermint patties

You only need 5 ingredients to create these sweet treats.

They have a perfect creamy center.

For the filling:

  • 7 cups powdered sugar
  • 14 ounces Nestle La Lechera sweetened condensed milk
  • 4 Tbsp butter room temperature (salted or unsalted)
  • 2-3 tsp peppermint baking emulsion or peppermint extract
  • 12 ounces Ghirardelli dark chocolate chips
  • 12 ounces Ghirardelli dark chocolate melting wafers

Let’s get started.

To make the centers of the pattie (peppermint filling), you need to combine condensed milk, butter, peppermint baking emulsion or extract, and powdered sugar to add gradually.

Start mixing at low speed and incorporate the ingredients.

Add more sugar as you go until you get the desired consistency. It should feel the same as the consistency of play dough.

Once you achieved the texture and consistency of the mixture, refrigerate and chill for 10 to 15 minutes.

Next, make the patties.

Using a teaspoon, or a scoop, take about 2 teaspoons of the filling and make a ball.

Place it on a sheet of parchment paper and place another piece of paper on top before pressing.

You can use any object that has a flat surface to press and make a disc.

The ideal thickness is about a 1/4 to 1/2 an inch. You can do this by batch or one by one.

Place the patties in the freezer for at least 30 minutes.

Now the fun part- melting chocolates.

Pre-heat your double boiler or anything that you can use to melt the chocolates into.

Good-quality chocolate bars are highly recommended, but you can still use chocolate chips.

Ghirardelli is one of the best dark chocolates out there.

Pour your chocolate chips into the double boiler pot and wait until everything has melted.

Don’t over-melt the chocolate.

Stir the chocolates from time to time over low to medium heat so you don’t over-melt them.

You can add ½-1 Tablespoon of coconut oil if you think your chocolate is too thick.

Now comes the dipping.

You’ll want to do this in batches as they warm up so fast.

Remove one batch of your patties from the freezer.

It’s important to get the right consistency of the chocolate since we want to coat the pattie all over and let the excess drip.

Using a fork, place the patty on the tip and dip it into the chocolate. Do this one by one and allow the excess to drip.

Then slide it onto another tray with a sheet of parchment. Repeat this on all the patties in the batch.

Try not to dig in.

Chill the finished patties in the fridge for about 5 minutes and then remove them and let them sit on the counter.

Repeat this whole process on all of the other batches.

Leave the dipped candies on the counter for a few more hours until they are set. Serve and enjoy.
