“Zucchini Roll Filled With Ground Beef & Cheddar Cheese”

- 2 pieces of zucchinis
- 8 pieces of eggs
- salt, pepper, and nutmeg
- 3 cups of shredded cheddar cheese
- 2 lbs of ground beef
- 1 piece of onion (diced)
- 2 garlic cloves (minced)
- 1 tbsp of rosemary
- 2 tbsp of tomato paste
- 2 tbsp of ketchup
Just follow the instructions below to see how it’s done.
Step Number One: Slice the zucchinis and sprinkle some salt on them. Then set them aside for 10 minutes so they extract some of their water and soften. After that, put parchment paper on a baking sheet then lay down the zucchini slices.
Step Number Two: Preheat your oven to 350° Fahrenheit. Grab a bowl, crack all the eggs in, and season it with salt, pepper, and (grated) nutmeg. Beat it until it becomes thick and creamy. Pour the egg mixture evenly on top of the zucchini slices.
Step Number Three: Put it inside your preheated oven and cook for 15 minutes. Once the time is up, take it out and let it cool down.
Step Number Four: While waiting, cook the ground beef in olive oil and add onion, garlic, tomato paste, and ketchup. Season it more by adding rosemary, salt, and pepper. Let it simmer for around 10 minutes over low heat, stir it regularly until it becomes brown.
Step Number Five: Grate some cheddar cheese and sprinkle it all over the cooked egg and zucchini mixture. Then add the ground beef, spread evenly. Roll it carefully using the parchment paper then bake it under 350° Fahrenheit for 15 minutes.
Step Number Six: Enjoy the zucchini roll by slicing it so you get to enjoy the juicy and cheesy filling inside.
