Ingredients:
- 2 ripe bananas (9-10 oz.)
- 1 egg
- 1 tsp active dry yeast
- 2 tbsp unsalted butter, melted
- ½ cup raisins
- ½ tsp salt
- 2 1/3 cup bread flour (or all-purpose flour)
Directions:
- Mash the bananas in a bowl. Add egg and whisk until smooth.
- Add yeast, melted butter, and raisins and whisk until all ingredients are well-mixed.
- Add the salt to the bowl of flour.
- Add flour to the mixture in small portions and stir every time. Do this until all the flour is added and you get the consistency of a dough.
- Cover the dough for 1.5 hours and let it rise.
- Sprinkle flour on a flat surface and place the dough. Sprinkle more flour on the dough and fold until its surface is not sticky anymore.
- Pat the dough until it’s slightly flattened and cut into equal portions.
- Gently fold and roll each portion into a ball.
- Place all rolled doughs in an 8×8 inch pan. Cover and let it sit for 45 minutes until it doubles in size.
- Place a fork on the bread dough and sift a little dry flour. Do this for all dough. You can use any object or shape instead of a fork.
- Put the tray inside the oven with 375 degrees Fahrenheit heat and bake for 15-20 minutes.
