If life gives you lemons, make lemon cake.

Or at least, that’s how this YouTube content creator plans if she finds herself with an abundance of this citrus fruit.

When it comes to citrus-infused treats, few things can compare to the irresistible tang and refreshing aroma of a well-made lemon cake.

This recipe shows us how we can easily make one in just a couple of hours with the preparations included.

For this recipe you will need the following ingredients:

For the pudding:

1 egg

50 grams of sugar

Pinch of salt

20 grams of starch

1 lemon

200 ml of milk

25 grams of butter

For the cake:

3 eggs

150 grams of sugar

10 grams of vanilla sugar

50 grams of sour cream

150 ml vegetable oil

250 grams of flour

15 grams of baking powder

Powdered or confectioner’s sugar

Let’s make the pudding first.

In a saucepan crack one egg and add 50 grams of sugar, a pinch of salt, and 20 grams of cornstarch.

Beat the mixture until the ingredients are combined well. Then, using a microplane or a grater, shave off the lemon zest. Make sure not to include the white membrane underneath the zest because it’s bitter.

Slice the lemon in half and squeeze half of the fruit for the juice. Add the milk.

Put the pan over the stove.

Heat the mixture while stirring continuously. This will thicken in a while.

Take the pudding off the heat and carefully stir in 25 grams of butter. You will notice that the pudding will become more velvety. Set aside. More importantly, resist the urge to dip your fingers for a taste. We understand it looks good but we’ll use this for later.

Let’s make the cake.

First, crack 3 eggs then add in 150 grams of sugar and 10 grams of vanilla sugar. Mix together using a hand mixer.

Then, add 150 ml of vegetable oil. Mix again, then add 50 grams of sour cream.

Measure 250 grams of flour and add 15 grams of baking powder. Sift the flour over your wet ingredients and mix them well. Squeeze the juice of the remaining half of the lemon from earlier.

Now, let’s assemble the cake!

Pour your cake batter into a deep baking pan. Shake the pan a bit to distribute the batter evenly over the surface. You can also use a spatula for this.

Take the pudding and put it in a piping tube. A clean plastic bag is enough if you don’t have piping tools. Just snip the corner, twist the bag to press the pudding together, then squeeze from the top.

You can use any design but for this version, we’ll just do a simple crosshatch.

Bake it in the oven for 40 minutes at 180 degrees Celsius.

Watch the cake expand and fluff up! Once done, take it from the oven and dust some powdered sugar on top. You can also add in some nuts of your choice before baking like roasted chopped almonds or walnuts.

Let it cool for a while then serve! Isn’t that amazingly easy?
