Do you have a sweet tooth? Although some of us prefer the more savory end of the taste spectrum, there are few things that can beat a perfectly made dessert. Whether you’re more into a creamy and cold desert like ice cream or a warm baked option like cookies, you really can’t go wrong with a little bit of sweetness after a nice meal. Although at this point in our lives we’ve probably all had most of the common desserts, today we have one that you might not have tried.
If you’ve kept up with any recent food trends, you’ll probably know that blueberries are starting to get their due as a delicious and nutritious superfood. Although we’ve all had blueberry muffins when we were growing up, when was the last time you had blueberries in a slightly heartier dessert than that? Today, we have an amazing recipe for a vanilla blueberry loaf that will take your breath away—and it couldn’t be easier to put together. Believe us, you’re going to wish you knew about this one sooner. So let’s do it.
Here’s what you’ll need:
- 1 1/2 cups of all-purpose flour (plus two tablespoons)
- 1 1/2 cups of frozen blueberries
- 1 cup of sugar
- 1 cup of softened unsalted butter
- 1/2 cup of Greek yogurt
- 3 eggs
- 1 1/2 teaspoons of vanilla extract
- 1 teaspoon of lemon zest
- 1 teaspoon of baking powder
- 3/4 teaspoon of salt
- powdered sugar
Here’s what you do:
1. To begin, preheat your oven to 350 degrees and grease up a 9×5 inch loaf pan with butter or non-stick spray. In the meantime, get a mixing bowl and combine 1 1/2 cups of flour, baking powder and salt and set it aside.
2. Next, get a large mixing bowl and add in your butter and sugar. Either by hand or with an electric mixer, cream these ingredients together until they become fluffy and lighter colored—the process should take approximately four to five minutes.
3. Gradually add in your eggs one at a time and beat them into the mixture, fully incorporating each one before continuing. Add in your vanilla and lemon zest after that. At this stage, you can alternate between adding in a little bit of your dry mixture and a little bit of the Greek yogurt. Begin and end with the dry ingredients and only mix until it is just combined.
4. Get another bowl and toss your blueberries in the leftover flour to keep them from sinking to the bottom of the cake when it bakes. When you’re ready, fold these into the batter as well.
5. Pour the batter into your cake loaf pan and put it in the oven when it’s ready for about 55 minutes. When the time is up, check it with a toothpick to make sure it’s cooked all the way through.
6. When it’s finally done, take it out of the oven and let it cool off for 20 to 30 minutes before taking it out of the pan. Dust it with powdered sugar at the very end and serve it while it’s warm!
As you can see, making this loaf is pretty easy and the results are unbelievable. The texture of the loaf is sweet and creamy while the blueberry and vanilla flavors accent each other perfectly.
