When it comes to versatility in the kitchen, it’s pretty hard to beat a good slow cooker. If you have a bunch of canned foods in the cupboard, throw it all in the slow cooker for the day and at the end of it all you’ll have a delicious chili. On the other hand, fill it with some dough and a sweet filling and you can even make a baked dessert. Perhaps best of all, it tends to cook meat perfectly.
The recipe we’ve got for you today is a bit of a twist on your favorite beef stew recipes. That’s right, we’re making a slow cooker veggie beef stew with V8 juice. Though the preparation is relatively simple, the results are rich, flavorful and probably unlike anything you’ve made in your slow cooker before. Who knew that getting your veggies in could be this delicious? Let’s get started.
Here’s what you’ll need:
- 2 pounds of beef, cubed
- 2 medium Yukon gold potatoes, chopped
- 1 medium onion, chopped
- 3 carrots, chopped
- 2 celery stalks, chopped
- 1 clove of minced garlic
- 1 tablespoon of Worcestershire sauce
- 1 12-ounce can of V8 juice
- 1/2 teaspoon of paprika
- 1/4 cup of flour
- 2 tablespoons of chopped parsley
- 1 teaspoon of salt
- 1 teaspoon of pepper
Here’s what you do:
1. First, start by chopping up your beef if you haven’t done so already. Throw your cubes in a bowl and season it with a half teaspoon of salt and a half teaspoon of pepper. Add flour so that all your cubes are coated without any flour clumps and set everything aside.
2. After that, throw your carrots, celery, onion and potatoes into your slow cooker. Season those with the rest of your salt and pepper as well as your paprika. Add garlic and Worcestershire sauce before topping it all off with the floured beef cubes.
3. With everything set, pour your V8 juice on top of everything and make sure everything is well mixed and combined. When it’s all set, cover the slow cooker and set it to cook on high for five hours. Be sure to open it up halfway through and give everything a stir as well.
4. When the time is up, open the slow cooker and check to make sure the beef is cooked all the way through. Give the mixture a taste and add additional salt and pepper as you see fit. Once that’s done, let it sit for 15 minutes and garnish with parsley before serving it up hot!
While there are plenty of easy slow cooker beef recipes out there, this one has some great flourishes that make the whole thing taste a lot better. Flouring the beef helps coat them in a layer of flavoring and the V8 juice adds a tartness that makes everything pop. To add even more flavor, you could also brown the beef cubes and vegetables in a skillet before throwing everything together in the slow cooker. Serve the end result with a nice crusty bread for best results!
