Cakes are so delightful. You can have them anytime of the day, and with so many varieties to choose from, there’s a always that sweet spot for everyone. And if you know someone who doesn’t like cake, bake a big one for them.
Here’s a really simple recipe that you can make at home. One everyone in the family will enjoy.
This is the Upside Down Banana Cake with One Egg.
You will need the following ingredients.
For the caramelized bananas:
- 15 g or 1 tbsp of unsalted butter
- 3 tbsp or 40 g brown sugar
- 2 bananas, ripe, cut lengthways
For the cake:
- 100 g flour
- 1 teaspoon of baking powder
- pinch of salt
- 40 ml vegetable oil
- 100g sugar
- 1 teaspoon vanilla extract
- 1 egg
- 100 ml buttermilk
Don’t peel them just yet. Take both bananas and cut off the tips. Then slice them right down the middle from top to bottom. Now you can peel off the skin.
Careful with that knife!
Melt the butter on a hot pan making sure to coat the entire surface as it melts. Cook the sugar with the butter, stirring occasionally until it melts.
Can you imagine the smell?
Sliced bananas in, flat side down on the pan. Make sure they fit so do it slowly. Crack an egg in to a mixing bowl then add a teaspoon of vanilla extract and 100g of sugar.
Add a pinch of salt then slowly but firmly mix up all the ingredients in the bowl. Whisk away until it’s a nice, smooth texture. Pour in the milk and vegetable oil then mix it all up again.
Mix the flour and baking soda in a separate bowl then go ahead and add them in to the cake mix. Go slowly, mixing them together until it becomes thick and gloppy. In a good way.
Pour the cake batter on top of those bananas until you’ve covered the entire surface.
Pop the pan in an oven and bake for 35 minutes at 360 F.
Once that’s done, take it out of the oven then with a small knife, cut slowly around the edge of the pan just to loosen up the cake. Then tip the whole thing over until the cake falls out.
It’s so mouth watering to look at. This can be served for breakfast, after lunch, or mid afternoons with a cup of coffee or tea. Perfect for quick get togethers, birthday parties, or just for your own pleasure.
