Tortillas can be transformed into so many amazing dishes.
When you have it around your house, it’s easier to make your own tortilla wrap, burrito, or quesadilla any time of the day. It makes a great snack or light meal, depending on what you put in it.
But how do you whip up something unique with a tortilla at home?
When you have tortillas sitting around, the first thing that’ll come to mind is a burrito or quesadilla filled with tasty meat and sauces.
Although, you might want to get rid of all that meat and fat for something healthier. ‘Is that even possible for a tortilla?’ you might ask.
Many healthy tortilla recipes are very satiating.
You can roast vegetables or have them fresh like lettuce, carrots, celery, and kale. Wrap them in a tortilla and add cheese, pepper, and yogurt as dressing.
If you want to add meat, you can use tuna, chicken, or lean pork for those who need a lot of protein.
But this recipe we’re featuring is one of the tastiest you’ll find.
This one doesn’t need any meat, but the eggs would cover your protein requirement for the day. Plus, it’s a great breakfast recipe to jumpstart your day.
Here’s what you’ll need:
- 4 eggs
- Salt
- Pepper
- 2/3 cup grated cheese
- Oregano
- Parsely
- Tomato
- 3.5 oz. mozzarella
First, heat a non-stick pan and add one tortilla.
Then, break four eggs into separate mini bowls before pouring them one by one on top of the tortilla. You can break the eggs directly on the tortilla, but it can be messier that way. Sprinkle some salt and pepper to taste.
Chop the parsley and spread it on top of the egg.
Add the grated cheese and place a generous amount on top. Don’t put all your cheese in there, though. You’ll still need some of them for later.
Sprinkle some dried oregano on top, and cover everything with another tortilla wrap.
Let it cook for five minutes on medium heat. While waiting, slice a tomato and mozzarella cheese into equal slices.
Flip the tortilla to the other side after five minutes.
Place the tomato slices on top of the flipped tortilla and season it with some salt. Then add the mozzarella cheese on top of it.
Add the remaining grated cheese on top, especially in the gaps between the tomatoes. Add chopped parsley and let it cook for another five minutes.
Once five minutes are up, your tortilla is ready to serve.
This recipe is packed with flavor and a whole lot of healthy goodness. You can reduce the cheese if you want less dairy in it.
But with the egg, tomatoes, and herbs, this tortilla will surely fill your stomach without feeling guilty about what you’re eating.
