It’s an exquisite dish that sounds difficult to make, but it’s actually very simple! Here are the ingredients you’ll need:
- 2 tablespoon olive oil
- 1 lb ground turkey
- 1 tablespoon ground cumin
- 1 teaspoon chili powder
- 1 cup diced onion
- 1 cup diced red bell pepper
- 1 cup vegetable broth
- 3 cups diced sweet potatoes
- 1/4 cup cilantro
- 1/2 cup shredded mozzarella
- salt and pepper
Heat some olive oil over medium high heat in a large skillet. Add in ground turkey, ground cumin, chili powder, and then salt and pepper to taste. Stir evenly until the turkey becomes lightly browned.
Add in onions and red bell peppers. Stir until they become lightly browned. Pour in the vegetable broth and sweet potatoes. Place a lid on top and let it simmer for 5~7 minutes.
Sprinkle some cilantro and mozzerella cheese on top. Then, simply serve and enjoy!
