These Slow Cooker Potatoes Will Melt In Your Mouth
The secret is in how you put the ingredients together.

When it comes to making meals in the slow cooker, there’s virtually no end to the recipes we can design. For anyone who doesn’t have time to cook, throwing a bunch of ingredients in one of these things in the morning and coming back at night for a finished meal is a great feeling unlike any other. Although we all probably know what goes well with what when it comes to slow cooker recipes, sometimes a tweak here and there can change the entire flavor. That’s certainly the case with today’s recipe.

Though you may have had cheesy bacon potato recipes in your slow cooker before, we doubt you’ve ever had one quite like this! The secret to this dish is all in the preparation. By using thinly sliced potatoes, stacking them in layers and putting fillings in between them, the result is a mouth-watering side dish that will truly melt in your mouth when you eat it. As a bonus, the entire thing is wrapped in foil for easy clean up!

Here’s what you need:

  • 2 large potatoes, thinly sliced
  • 1/4 pound of chopped bacon
  • 1 cup of thinly sliced onions
  • 2-3 cloves of sliced garlic
  • 3 tablespoons of butter
  • 2 cups of cheddar cheese
  • 1-2 tablespoons of sliced green onions
  • 1 teaspoon of salt (or to taste)
  • 1 teaspoon of pepper (or to taste)
  • aluminum foil

Here’s what you do:

1. Before you get started, break off a few sheets of aluminum foil and carefully line the bottom of your slow cooker with them to keep your ingredients from sticking to the sides. Make sure to leave enough excess foil to be able to wrap everything up at the end. If you don’t have foil or you don’t want to cook with it, you can also spray the inside with some non-stick spray instead.

2. Be sure to prepare all your ingredients at this stage with special attention paid to the potatoes—chop them as thinly as possible! Once you’re ready, lay down one later of potatoes on the bottom of the slow cooker. Next, add a few slices of garlic scattered throughout, then a layer of onions and then some salt and pepper.

3. Repeat this process of layering potatoes, garlic, onions and salt and pepper until you’ve used up all your ingredients. Next, throw your chopped bacon in there as well (you can pre-cook it or throw it in raw). After that, you can top everything off with one cup of shredded cheese and butter on top of that! Now that it’s complete, wrap the entire thing with your excess foil to let it steam.

4. Cook your potatoes on high for four hours or on low for eight to 10 hours. Once the time is up, open your foil and get a fork to make sure your potatoes are cooked through. If everything is good, add in your other cup of cheese and top it off with your sliced green onions. Cover it again and let it finish on low for 15 minutes so that the cheese can melt. After that, you’re ready to serve!

As you can see, this recipe takes a very familiar slow cooker recipe (and a likely family favorite) and tries to make it even better. Though it has all the flavors you’re already used to, the way this dish is assembled from top to bottom ensures that each layer of potatoes absorbs maximum flavor and basically turns into butter! While this recipe may not be a perfect standalone dinner option, it would work perfectly at a backyard party with friends or as a side dish for your family. Enjoy!
