Do you have avocado fever? Ok, so that’s not a real thing—but if you keep up with food trends at all, you might be convinced that it is. Lately it seems like avocados are enjoying a wave of popularity for a variety of reasons—for one thing, people are beginning to realize the benefits of eating healthy fats like those found in avocados. Still, the main reason we eat avocados is because they’re creamy, delicious and they go with so many different meals. Still, today we have a new take on the avocado that we’re pretty sure you haven’t tried before.
You may have had avocado in a taco before, but have you ever tried using the avocado itself as the taco? That’s kind of what this recipe is. Put simply, this is a recipe for taco-stuffed avocados that turns a classic family dinner on its head.
Here’s what you need:
- 4 ripe avocados
- 1 lime
- 1 tablespoon of extra-virgin olive oil
- 1 medium chopped onion
- 1 pound of ground beef
- 1 packet of taco seasoning
- salt
- pepper
- 2/3 of a cup of shredded Mexican cheese
- 1/2 cup of shredded lettuce
- 1/2 cup of quartered grape tomatoes
- sour cream
Here’s what you do:
1. First, prepare your avocados by cutting them in half and taking the pits out. Get a spoon and scoop out a little bit of the middle of each half around where the pit would’ve been to make the hole a bit wider. Be sure to dice up the part you’ve scooped out and set it aside to use later. In the meantime, take your lime and juice it, putting a little juice on each of the avocado halves to stop it from browning.
2. Next, get a medium skillet going over high heat and add oil. Add in your chopped onion and cook until it’s tender, generally for about five minutes. After that, throw in your ground beef and taco seasoning, gradually breaking up the meat with a wooden spoon or a spatula. Ass in some salt and pepper and keep cooking until the meat is no longer pink, somewhere around five minutes. At that point, take the skillet off the heat and drain the fat from the pan.
3. Now you’re ready to assemble everything! Take your avocado shells and fill them halfway up with beef. After that, throw in your leftover chopped avocado along with shredded cheese, lettuce, tomato and a scoop of sour cream. At that point, you’re ready to serve!
As you can see, this recipe couldn’t be easier to prepare and is guaranteed to be delicious. For those who have gluten allergies or who are taking bread off their plate more generally, this recipe may be particularly useful (people who are on low-carb and ketogenic diets, we’re looking at you).
