Try Out This Gooey And Delicious Stuffed Pepper Recipe
This Tex-Mex recipe will come out gooey and delicious every single time.

An easy way to spice up your dinner routine is to branch out into some different cuisines. There are some kinds of food that require at least some special knowledge or practice to make the right way (we’re looking at you, Thai and Chinese food), but others are more accessible than we may realize. We all have our favorites but one variety that is particularly easy and delicious is Mexican and Tex Mex-style food.

Although there is plenty of variety within this “genre” of cooking, many of the Americanized recipes include plenty of cheese, savory spices, beefy goodness and peppers. Fortunately, we have an easy and delicious dinner recipe for stuffed peppers that is sure to become a family favorite.

Here’s what you need:

  • 4 large bell peppers
  • 1 lb lean ground beef
  • 1 oz packet of Old El Paso Taco Seasoning
  • 1/2 an onion, diced
  • 1 can of Old El Paso green chiles
  • 1/4 cup of medium Old El Paso Red Enchilada Sauce
  • 2 cups of Mexican blend shredded cheese
  • sour cream
  • fresh cilantro

Here’s what you do:

1. First, preheat your oven to 350 degrees. Get a baking sheet and line it with some aluminum foil and set it to the side.

2. Get a medium pan and heat it over medium-high heat. Throw in your ground beef, breaking it up as you cook. Stir in your packet of taco seasoning and keep stirring to make sure it spreads evenly on all the meat. Throw in your diced onion as well and let it all cook together.

3. Keep cooking the mixture until the beef is almost completely cooked through and the onions are beginning to turn translucent. At this point, stir in your green chiles and enchilada sauce, mixing it all up. Turn off the heat and leave the pan to the side.

4. Next, start preparing your peppers. Cut the tops of each one and hollow out the insides of all the seeds and lining. Line your peppers up on your baking sheet—now you’re ready to stuff them!

5. To stuff the peppers, begin by putting in a few spoons of beef in the bottom before adding a half cup of cheese on top. Once it’s full, carefully put the top of the pepper back on top. Repeat this process with the other three peppers (or as many as you’ve made).

6. When your oven is hot enough, bake your peppers for 30 to 40 minutes or until the peppers are tender on the sides and the cheese is melted. Once they come out, eat them right away and feel free to garnish them with cilantro and sour cream. Enjoy!

Aside from being a super simple recipe, the family is sure to enjoy, the way the recipe is set up also leads to very little clean-up! As always, this recipe is also totally customizable as well. If you want to cut back on calories, use less cheese or substitute the beef in the recipe for chicken (or even quinoa, if you’re feeling really healthy).

While this recipe calls specifically for Old El Paso ingredients to keep everything streamlined, don’t feel limited by these ingredients after you’ve gotten the hang of it. If you’re feeling really ambitious, try seasoning the beef with your own mixture of spices! Or take things up a notch by throwing in a hotter sauce. Above all, have fun with the recipe and keep in mind the overall format of the stuffed pepper next time you make dinner.
