These Stuffed Pepper Eggs Are A Perfect Appetizer
These are creamy and cheesy with a perfect crunch as well.

When it comes to basic and essential cooking skills, it doesn’t get any more foundational than cooking eggs. When a restaurant hires a new potential chef, one of the first things they often do is have the chef prepare eggs for them to get insight into their understanding of cooking basics. Still, we’re not talking about actual cooking techniques today. What we are talking about, however, is a delicious and fun new way to cook eggs that is sure to become one of your new breakfast (or appetizer) favorites.

Today, we’re looking at a delicious recipe for stuffed pepper eggs. Although these can make for a nice and spicy breakfast, they’re also a perfect appetizer for a big party or a backyard barbecue. Perhaps best of all is they require very little cooking! All you have to do is a boil a bunch of eggs, mix together some ingredients and chop some peppers in half. Still, we’re getting a little ahead of ourselves. Let’s get down to business, shall we?

Here’s what you’ll need:

  • 4 peppers (use whatever colors you want)
  • 4 hard-boiled eggs
  • 500 grams of cheese (parmesan or gouda work well)
  • 1 cup of mayonnaise
  • 1 bunch of chives
  • 4 cloves of minced garlic
  • salt
  • pepper

Here’s what you do:

1. To start things off, make sure to have a bunch of hard-boiled eggs on hand before you begin this recipe. To do this, bring a pot of water to a boil over high heat. Once it gets to a boil, turn the heat down to low and add your eggs in. Boil them for between four to five minutes for a softer boil up to eight to 10 minutes for a harder boil. After the time has passed, pull the eggs out and dunk them in an ice bath. Store them in the fridge until you’re ready to use them.

2. Once the eggs are ready, get out your cheese of choice and grate it all into a medium sized mixing bowl. Peel and mince your garlic cloves and add them into your cheese (feel free to use more if you want more garlic flavor) along with a cup of mayonnaise. Finally, finely chop up your bunch of chives and add them as well. Mix everything well until it’s evenly combined.

3. Next, peel your hard boiled eggs so they’re ready for the next step. Once they’re peeled, get your peppers out and chop the tops off of them. Use a knife to scrape out the seeds and the center of the pepper as well.

4. When your peppers are clean, use a spoon to scoop some of the cheese mixture into the bottom of each one. When it’s about a third of the way full, put one of your hard-boiled eggs in the middle of it before filling in the pepper the rest of the way with the cheese mixture. Repeat for all of your peppers. When you’re done, put them in the fridge for four hours.

5. After they’ve cooled, take them out and turn each pepper on its side. Use a sharp knife to slice each one into cross-sectioned pieces about an inch wide each. When you’re done, lay the slices out on a plate and serve!

Although this recipe is pretty simple, the result is cheesy and delicious appetizer which is sure to be a hit at your next party. The cheese and garlic flavors go perfectly together while the pepper on the outside adds a little bit of spice and crunch.
