For chocolate lovers, it’s hard to go wrong with a good brownie recipe. If you’re ever looking for an easy dessert to make for a party, it’s hard to go wrong with a tray of brownies. Still, as far as desserts go, brownies are a little on the heavy side—and when the weather turns hot, sometimes you want a dessert that tastes a little lighter and a little fruitier. Today, we have a recipe that does just that.
If you love brownies but you’re looking for a summer-inspired twist on this classic, have you ever heard of pinkies? Ok, so maybe nobody calls them that… but what we’re talking about are some delicious strawberry cake brownies that are perfect for your next cookout.
Here’s what you need:
- 1 box of strawberry cake mix
- 2 eggs
- 1/2 cup of canola oil
- white chocolate chips (optional)
- 1 cup of powdered sugar
- 1 1/2 tablespoons of milk
- 1/2 teaspoon of vanilla extract
Here’s what you do:
1. To begin, preheat your oven to 350 degrees and line a nine-inch baking dish with parchment paper. Make sure you leave about a two-inch overhang on each of the sides. Next, Get a big bowl and beat together your eggs and canola oil with your strawberry cake mix. Keep mixing everything together until it’s totally smooth and there are no more lumps. If you plan on using white chocolate chips in your recipe, add them in at this point as well.
2. Once your batter is ready, pour it into your baking dish and smooth out the top so it all sits in an even layer. As soon as your oven is preheated, throw your baking dish in and let the whole thing cook for 15 to 17 minutes. After that time has passed, check your brownies using the “toothpick test” to see if they’re ready (stab them with a toothpick: if it comes out clean, they’re done).
3. After you’ve taken your brownies out, let them cool for about five minutes before taking them off the parchment paper and transferring them to a wire rack to cool off even more. Now, you’re ready to make your glaze!
4. Get a medium bowl and whisk together your milk, vanilla extract and powdered sugar until the entire mixture is smooth. If you want to make the frosting a little thicker, use less milk. If you want it thinner, use more!
6. Once your glaze is ready, drizzle it over your cooled brownies and let it sit so it all has time to set and come together. Once it’s ready, slice your sheet of brownies up into squares and they’re ready to serve!
As you can see, this strawberry brownies have all the texture and flavor of regular brownies—just with a lighter and zestier kick that’s better suited to different occasions. These would be great at a summer cookout though they could also be made on Valentine’s Day, at a wedding, a baby shower and other fun parties.
In theory, the basis of this recipe is also transferable to other fruit-based brownie bar desserts. Maybe give this a try with lemon cake bars? Or blueberry cake bars? The possibilities are endless!
