How do you like to make your potatoes? In America, potatoes are the most eaten vegetable that there is. It’s not hard to see why potatoes are so beloved. After all, they are delicious and can be prepared in variety of different ways. There’s french fries, mashed potatoes and baked potatoes as well just to name a few, but there are also some more creative ways to prepare these veggies that you may not have tried before. Today, we’re bringing you a recipe that combines all the best of each texture into one meal.
Mashed potatoes bring the smoothness, fries bring the grease and the hearty feel and baked potatoes are warm and comforting. But have you ever tried smashed potatoes? If not, this just might become your new favorite recipe. Smashed potatoes combine the best of all of these recipes into one delicious dish that you can even eat as a snack. Believe us, you’ve never had potatoes like this before. So let’s get started.
Here’s what you’ll need:
- 1.5 lbs of small potatoes
- 3 tablespoons of melted, unsalted butter
- 1 tablespoon of olive oil
- finely chopped parsley
- salt
- pepper
Here’s what you do:
1. To start, fill a pot with water and bring it to a boil. Drop your potatoes in it and let them cook until they’re soft. If your potatoes are relatively small, this process should take about 20 to 25 minutes. Because the potatoes are going to end up being smashed later in the recipe, don’t worry too much if the skins split!
2. Once those are ready, preheat your oven to 350 degrees while you drain your potatoes in a colander. Let them sit there for about 5 minutes to get as much moisture out as possible. When they’re dry, put them on a baking tray and use a fork or a potato masher to roughly smash them while still keeping them in one piece. The thinner they are, the crispier they will be—and the rougher the texture the more variety in the flavor!
3. After you’ve mashed them, let them steam dry on the tray for another five minutes to get more moisture out. After that, drizzle them with your butter and a little bit of olive oil. Sprinkle salt and pepper on top to taste. Finally, when the oven is hot enough, pop the entire tray inside and bake them for 40 minutes until they’re golden brown (no need to flip them over halfway through).
4. When they’re done, let them cool off a little bit before sprinkling them with some chopped parsley as a garnish and enjoy!
As you can see, this recipe is fairly straightforward and yields some truly delicious potato snacks. The texture will be crispy in some places, firm in others and still soft throughout, all with a buttery and salty flavor as well.
While our recipe sticks to the basics, you can also experiment with addition some seasoning to your potatoes during the boiling process to give them some extra flavor. On the other hand, you could also smash some garlic cloves and cook those along with the potatoes as well. Finally, you can definitely still serve these with all the toppings and fixings that you like—we’re thinking some sour cream and cheese would complement them perfectly!
