The great thing about slow cookers is that they take minimal effort, and the end result always comes out unimaginably delicious. I came across an easy recipe to make some mouthwatering, tender honey garlic chicken. And you want to know the best part? It only takes 20 minutes of prep time!
You can make a big batch and share it with friends, or save some for meals to eat throughout the week. This is a easy recipe that everybody will love. Here are the ingredients you’ll need:
- 3 large bone-in, skinless chicken breasts (2 1/2 to 3 lbs total)
- 3 cloves of minced garlic
- 1/2 diced onions
- 1/4 cup blackberry jam
- 1 tablespoon cornstarch
- 1/2 honey
- 1/4 hoisin sauce
- 1/2 cup low sodium soy sauce
- 2 tablespoons of olive oil
- 1/4 teaspoon of crushed red pepper (optional)
Arrange the chicken breasts in the slow cooker so that they are not overlapping.
In a medium bowl, whisk together the honey, soy sauce, blackberry jam, hoisin sauce, olive oil, garlic, onion, and crushed red pepper flakes.
Pour this delicious concoction over the chicken.
Cover the slow cooker and cook the chicken on low heat for 4 to 5 hours, or until the chicken is fully cooked.
Using tongs, remove the chicken from the slow cooker and place it onto a cutting board. Reserve the liquid in the slow cooker, you’ll need it for your sauce later.
Shred the chicken into smaller pieces and remove any bones.
In a small bowl, whisk together the cornstarch with 3 tablespoons of cold water.
Set a small saucepan over medium-high heat and transfer in the liquids from the slow cooker. Then, pour in the cornstarch mixture. Bring the sauce to a boil and cook it for about 3 minutes, or until it has thickened slightly.
Pour this goodness over the chicken and tada, you’re done!
You can garnish it with some green onions, sesame seeds, red peppers, or just leave it as is. It’s delicious either way!
