Learn How To Make Hasselback Potatoes In A Slow Cooker

Got an old bag of potatoes and a fridge full of ingredients you’re desperate to use up? We’ve got just the thing: this delicious, slow-cooked recipe for hasselback potatoes. Those looking for a hearty, flavor-packed dinner with almost no preparation are sure to be wowed by this one—aside from being quick and easy, there’s also plenty of room to experiment and add your favorite ingredients at the end. Here’s everything you need to get started:

INGREDIENTS:

  • 4 red potatoes (or as many as you can fit in your slow cooker)
  • 2-3 tablespoons of oil (or butter)
  • filling ingredients (bacon, cheese, sour cream, chives)
  • 2-3 teaspoons of salt
  • aluminum foil

INSTRUCTIONS:

First, rinse your potatoes and be sure to cut out any eyes or soft spots. Once they’re ready, get a knife and slice your potatoes across the top while being careful not to go all the way through (leave about a half-inch of uncut potato at the bottom).

A trick here is to lay a butter knife flat alongside your potato to use as a guide, cutting only to the top of it. Still, make sure to cut deep enough that the slices can be pulled apart and packed with fillings!

Once the potatoes are sliced, tear off a piece of aluminum foil and line the bottom of your slow cooker with it. Put your potatoes in the slow cooker on top of the foil and give them a light dousing with a few tablespoons of cooking oil—as an alternative, rubbing them with a few tablespoons of butter will also do the trick. Next, sprinkle your oiled potatoes with salt to your liking. A few teaspoons should be enough!

After that, set your slow cooker to high and cover it. Set your timer for three to four hours, checking the potatoes until they’re sufficiently soft. While the potatoes are cooking, feel free to chop whatever fillings you want for the end (like chives or cooked bacon, for example).

Once the potatoes come out, pack the slices full of your favorite toppings and get ready to serve. The best part? If you top your potatoes carefully over the foil you’ll have almost no clean-up at the end. Bon appétit!
