Make A Delicious Corned Beef And Cabbage Using A Slow Cooker

St. Patrick’s Day is right around the corner and you’ll likely want to treat yourself to a festive meal. What you probably don’t want to do is spend hours in the kitchen cooking it. Well, we can solve that problem for you!

You can make a delicious corned beef and cabbage meal for St. Patrick’s Day by dumping some ingredients into a slow cooker, setting it, and forgetting it until it’s ready. Here’s how…

Ingredients:

  • 2 celery stalks cut into 3-inch pieces
  • 3 carrots cut into 3-inch pieces
  • 1 small yellow onion cut into 1-inch wedges (make sure you leave the root end intact)
  • 1/2 pound of small potatoes (or halve large ones)
  • 6 sprigs of thyme
  • 1 corned beef brisket (about 3 pounds),
  • 1 pickling spice packet or 1 tablespoon of pickling spice
  • 1/2 head of Savoy cabbage cut into 1 1/2-inch wedges
  • Grainy mustard (optional)

Directions:

Step 1.) Place your celery, carrots, onions, potatoes, and thyme into your slow cooker. It’s best to use a 5 to 6-quart slow cooker.

Step 2.) Then put your corned beef into the pot with the fat side up.

Step 3.) Place your vegetables on top and sprinkle with some pickling spice.

Step 4.) Pour in about 4 to 6 cups of water so that your meat is almost covered.

Step 5.) Cover your crock pot and cook it on high for about 4 1/2 hours (or 8 1/2 hours on low) until your corned beef is tender.

Step 6.) Pull some of your cabbage on top of your corned beef, cover again, and continue to cook for about 45 minutes (or 1 1/2 hours on low).

Step 7.) Thinly slice your corned beef going against the grain and garnish with your mustard.

Your family will think you spent hours cooking this festive meal when all you really did was cut up some vegetable and plop some meat into a pot. Enjoy your delicious St. Patrick’s Day meal!
