You know that many people are in love with their slow cooker, right?
In case you didn’t know why, here are a few reasons.
First of all, they help you cook delicious meals without having to bother about them too much.
You just toss the ingredients in there and let them cook for hours until it’s dinner time.
Of course, using the slow cooker to cook in the summer is an amazing idea since you won’t have to stand over the heat for hours, checking on the oven, opening pot lids, and other stuff that will definitely make you sweat.
Last but not least, using the slow cooker means that members of the family that have different schedules will still enjoy a hot meal, since the food will still go strong for the later crowd.
So, this summer, try using your slow cooker more and keep your house cooler than ever.
If you want to try something delicious for your next gathering, this should definitely be the Honey Garlic Chicken Thighs that YouTuber Cooking with Claudia created a while ago.
For this recipe you will be needing:
- 6 to 8 large bone-in, skin-on thighs
- 1 large onion
- 1 lb baby potatoes
- 2 teaspoons oregano
- salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 6 cloves garlic
- 1/3 cup sweet chili sauce
- 1/2 cup honey
- 1 tablespoon brown sugar
- 3 tablespoons soy sauce
- 1 tablespoon dijon mustard
- 1 tablespoon corn starch mixed with 2 tablespoons water
Once you have all the ingredients on hand, make sure you wash the potatoes thoroughly.
If you can’t find baby potatoes, make sure you cut them up.
Of course, you can use gold potatoes instead.
Also, mince the garlic and onion before starting tossing everything in the slow cooker.
Once everything is ready to be added into the pot, your meal is almost ready.
Place the chicken thighs in the pot, along with the potatoes and onions.
Then add the seasonings and olive oil and mix well so that your chicken is well seasoned.
In a small bowl, add the lemon juice, honey, mustard, sugar, garlic, chili sauce, soy sauce, and mix well.
Add the sauce to the slow cooker and cover the chicken and potatoes with it.
Cook for four to six hours on high.
After five hours, take the lid off and check the sauce.
If it’s a little too runny, you can make it thicker by adding the mix of corn starch and water.
Mix it in very well and let the food cook for about another hour.
When it’s ready, you can remove some of the oil that has collected on the surface, and then you’re practically ready to serve.
Optionally, you can use a blow torch to make the chicken look more even in color.
The lady in the video served the chicken with some rice, but this is completely up to you.
How easy was that? Hope you enjoy it with your friends and family soon!
