Slow Cooker Chicken Parmesan

I would like to say that this dish incorporates two of my favorite things: slow cooker and cheese.

Let me confess my cheesy love first. I just love how cheese covers every part of the dish, almost like it’s hugging everyone and making sure that no one is left out. And this dish is really about two parts coming together as one: the pasta and the chicken.

Now let me get into the slow cooker. After you drop all the ingredients into it, the slow cooker does all the magic for you by infusing the spices into the chicken, making it juicy and bursting with flavor. All you need to do is prep, but everyone will be firmly convinced that you’re a world class chef.

Simple ingredients, bursting with flavor, and most importantly, a lot of cheese.  This recipe elevates a simple pasta dish into a classic, hearty meal. I’m so excited to share it with you!

INGREDIENTS:

  • 4 boneless, skinless chicken breasts
  • Kosher salt and freshly ground black pepper
  • 2 (28-ounce) cans crushed tomatoes
  • 1 onion, diced
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/2 teaspoon crushed red pepper flakes
  • 1 pound penne
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley leaves

INGREDIENTS:

First, season chicken with salt and pepper. Place chicken into a slow cooker. Stir in crushed tomatoes, onion, basil, oregano, parsley and red pepper flakes. Cover and cook on low heat for 4 hours. Remove chicken from the slow cooker and shred using two forks.

Next, you’ll want to cook your pasta in a large pot of boiling salted water. Simply follow your package instructions. Once you’ve cooked your pasta, stir pasta and chicken into the slow cooker and top with cheeses. Cover and cook on low heat for an additional 10-20 minutes, or until the cheeses have melted.

Serve immediately, and don’t afraid to add vegetables or garlic to add even more flavor to this dish!
