Turn slices of eggplant into delicious, keto-friendly mini pizzas

Eggplant is well known for its fleshy, meaty texture.

Although it is cooked in many dishes as if it’s a vegetable, it is botanically classified as a berry. It’s the fruit of a plant of the same name.

Tomatoes and potatoes are also relatives of eggplants.

Why is it called an “eggplant?”

Back in the 1700s, early European eggplant varieties were smaller and yellow or white. They resembled goose or chicken eggs, hence the name “eggplant.”

Eggplants grow wild, but they are also grown as an annual crop in mild climates.

Isn’t it amazing? However, most of us are not fans of these “veggies.” You may have noticed a lot of tiny, soft seeds inside of an eggplant.

Although the seeds are edible, they have a bitter taste. But, worry no more!

The shiny dark violet fruit offers not only provides unimaginable delights — but it’s also the key ingredient for the smallest pizza in the world!

This recipe is inspired by Scrumdiddlyumptious, which brings you the best recipes and cooking hacks that you can easily recreate at home!

It’s simply titled “Eggplant Pizza.” Let’s get started! To make these delicious, keto-friendly mini pizzas, you’ll need to prepare the following lists.

Here are the ingredients:

  • 4 eggplants
  • 2 teaspoon of salt
  • 2 teaspoon of vegetable oil
  • 2 teaspoon of oregano
  • 2 garlic cloves, chopped
  • 1 1/2 cups of tomatoes (canned)
  • 8 oz mozzarella balls
  • 10 basil leaves

The process is as follows:

Step 1: Slice the eggplant into thick slices and place them on a baking sheet.

Step 2: Sprinkle 1 teaspoon of salt over the slices and wait about 30 minutes.

The salt will dissolve during this time. Any remaining salt on the slices can be wiped away with a paper towel.

Step 3: Coat each of the eggplant slices with 1 teaspoon of vegetable oil. Then season the slices with 1 teaspoon of oregano.

Step 4: Bake the eggplant slices for 25 minutes at 350 degrees Fahrenheit (176 degrees Celsius).

While waiting for it to finish…

Step 5: Heat 1 teaspoon of vegetable oil in a pan and add the chopped garlic cloves, canned tomatoes, and 1 teaspoon of salt and oregano.

Step 6: After baking, top each slice of eggplant with a generous dollop of tomato sauce.

Step 7: Place the mozzarella balls on top of the slices and bake for 5 minutes more at 350°F.

Step 8: Finally, garnish the finely chopped basil leaves on top of the slices
