The simplicity of the tortilla is what makes it a universal favorite thing to cook with. You’ll often find it used to make tacos, but the humble tortilla can do a lot more than just house some greasy beef and tomatoes.
This simple stuffed tortilla recipe is a different way of working with the signature, flatbread.
And there won’t be anything overly greasy or spicy with this one, so don’t worry. Of course, before starting anything, you’ll need the ingredients. A tortilla, some cheese, eggs, and a frying pan to start.
First, take some of the cheese and grate it. About 150 grams of it should do. Then beat one egg in a bowl.
You’ll want to make sure the cheese is kept somewhere easy to handle for when you come back for it.
Dip the tortilla in water and make sure it’s fairly submerged.
Don’t leave it in the water, just dip it for a second or two.
Now place it into the frying pan and pour the egg over it. Spread it if you can, but don’t turn on the heat just yet.
Take some of the cheese and slowly begin to top the cooking tortilla.
You’ll want to make sure the cheese is nice and evenly spread. Don’t use up all the cheese, since you’ll need some for the other side later.
Now fry it for 3-5 minutes.
Next, grab some tomatoes and begin chopping them. This is just one of the other set of ingredients you’ll also need.
Chop the tomatoes into quarters, and then chop those quarters into halves.
You want them nice and small for this recipe. But not too small – don’t dice them like you’re making salsa.
After those 3-5 minutes are done, return to the tortilla and flip it over. There should still be some egg left over in the bowl.
Take a cooking brush and use it to spread the remaining egg over the other side of the tortilla (the one opposite to the cooked side).
Besides the tomatoes, the rest of the other ingredients you need are basil leaves, feta cheese, and olives.
All of them go on the same side as the tomatoes.
Tomatoes go on first, then the basil leaves, then the olives.
And the cheese follows. Take several small slices of feta cheese and top the vegetables with it.
Remember that leftover cheese from the one you grated earlier? Take what was left of that and scatter it around the little mound of veggies and cheese on the tortilla.
Perhaps the most important step is next. Wrap the tortilla up with all the contents inside by folding its sides.
Once you’ve done that correctly, flip it over and fry it for another 1-2 minutes.
When those 1-2 minutes are over, you can take your creation out of the frying pan and enjoy the savory taste of a cheesy stuffed tortilla!
