We’ve all been that person who forgot to take the night’s dinner out of the freezer.

It’s something that can really dampen your day.

Or worse, force you to spend $50 to Uber Eats or DoorDash dinner.

But only if you don’t know this super delicious and easy-to-prepare meal. Forgetting to defrost your dinner is now a thing of the past when you can make a perfectly scrumptious meal with frozen chicken.

According to CookingLight, the USDA tells us that you can safely cook frozen chicken.

You just have to increase your oven or stovetop cook time by at least 50 percent. Slow-cooking frozen chicken, however, is a no-go.

You just have to make sure that your meat isn’t in a giant frozen clump.

That’s why this recipe calls for you to shred your frozen chicken.

But this recipe has everything you need for a satisfying meal. We have chicken, potatoes, AND cheese.

Need we say more?

You’ll shred your frozen chicken and mozzarella cheese and toss it in a bowl with chopped shallot, egg, oregano, and salt and pepper for seasoning. Mix everything together and add some oil and/or butter to your pan. Cook your meat for 15 minutes on each side, and you are done!

Ingredients:

  • 1 chicken breast (frozen)
  • 1 shallot
  • 2 potatoes
  • 1 egg
  • salt for seasoning
  • black pepper for seasoning
  • 1/2 tsp. oregano
  • 7 oz. mozzarella cheese
  • 2 tbsp. olive oil
  • 1 tbsp. butter (optional)
  • parsley (optional)

Step 1.) Shred your frozen chicken breast using a cheese grater. Put the shredded meat into a bowl.

Step 2.) Dice up your shallot. Toss into the bowl with your shredded chicken.

Step 3.) Shred 2 potatoes. Take a handful of your shredded potatoes and squeeze it to get rid of some of that starchy water before adding to your bowl of meat and shallots. Do this to all of your shredded potatoes.

Step 4.) Crack an egg into your bowl.

Step 5) Season your mixture with salt and pepper.

Step 6.) Toss in your oregano.

Step 7.) Shred your mozzarella cheese and add it to your bowl.

Step 8.) Mix the contents of your bowl well by hand.

Step 9.) Drizzle your olive oil into a pan. You can melt the butter into your pan if you’d like.

Step 10.) Pour your mixture into the pan. Pat it down so that it is spread out evenly over the pan.

Step 11.) Cover your pan with a lid and cook over low heat for 15 to 17 minutes.

Step 12.) If you want to use some parsley, you can chop it up finely while you wait for your meat to cook.

Step 13.) After 15 to 17 minutes have passed, take the lid off of your pan and place a plate over the pan. Use this to flip your meat into the plate and then transfer it back into the pan with the cooked side up. Continue to cook for another 15 minutes.

Step 14.) Take your pan off of the heat and transfer your meat onto a plate.

Step. 15.) Garnish with chopped parsley

Step. 16) Cut your meat into slices and enjoy!
