Red velvet is one of the most delicious types of layer cakes. However, it’s not always convenient to prepare and bake an entire cake in the oven, especially if we are just looking for a single serving. Luckily, self-taught baker Eloise Head from Fitwaffle Kitchen has the solution.

Her delicious red-velvet recipe can be enjoyed anytime, anywhere, as long as you have a microwave.

The 26-year-old came up with an ingenious way to make red velvet cake using a mug and some very basic ingredients.

It’s the perfect recipe for when you are craving the rich flavors of red velvet, but don’t want to go through the hassle of baking an entire gigantic cake.

Let’s get started.

First, whisk 2 tablespoons of milk with 1/2 tbsp of lemon juice in a mug. It’s also possible to substitute white vinegar for the lemon juice. If you don’t have a whisk on hand, simply stirring rapidly with the measuring spoon should do the trick as well.

Next, you’ll want to add in 4 tablespoons of plain white flour, 2 tablespoons of granulated sugar, 1 1/2 tablespoons of vegetable oil, 3/4 teaspoon of cocoa powder, and a 1/4 teaspoon of baking powder.

A dash of red food coloring should be stirred in as well to give the cake that signature red velvet color that we all know and love.

You want to mix it all up until the batter is creamy and smooth.

Sprinkle 30 grams of white chocolate chips on top and fold them down into the batter.

Microwave it all in the mug on high-power until the sponge of the cake is fully cooked and solid. In Eloise Head’s 700-watt microwave, it took around 1 minute 10 seconds. Depending on the strength of your own microwave, you may need to adjust the timing up or down by a few seconds.

Lastly, you’ll want to make the icing. It’s super simple to do. Just mix 40 grams of cream cheese with 15 grams of icing sugar. Spread it on the top of your cake with a spoon, and that’s it! Your red velvet mug cake is ready to be enjoyed.

  • 3 tbsp milk

  • 2 tbsp granulated sugar

  • 1 1/2 tbsp vegetable oil
  • Red food coloring
  • 30g white chocolate chips
  • Icing sugar for dusting

Cream Cheese Icing Ingredients:

  • 40g cream cheese
  • 15g icing sugar

Recipe Directions

  1. Mix milk and lemon juice in a mug using a whisk.
  2. Combine flour, sugar, cocoa powder, baking powder, vegetable oil, and a splash of food coloring with the milk and lemon juice, and stir until smooth.
  3. Scatter the white chocolate chips on top and fold them into the batter.
  4. Microwave on high for 1 minute and 10 seconds.
  5. Mix the cream cheese and icing sugar to make the topping. Then spread it on.
