What you’ll need:

  • 2 chicken breasts
  • 1 tomato
  • 3.5 ounces of cheese (your choice)
  • 1.5 tablespoons of butter
  • Olive Oil
  • Salt
  • Pepper
  • Paprika
  • Thyme

You will want to start off by preheating your oven to 400 degrees, then it will be time to start your prep.

First, you will need to cut your chicken lengthwise but not all the way through. You will want each chicken breast to be cut through but not separated into new pieces. By cutting it lengthwise you will create a “pocket” to stuff your chicken with all the other delicious ingredients.

Once your two chicken breasts have been cut correctly, it is time to season them to perfection. You will want to evenly season the chicken breasts with salt, pepper, paprika, and thyme to your taste. Make sure to keep your seasoning even for the whole chicken breast so the flavor matches for every bite.

The more seasoning, the more flavorful your chicken will be.

Before moving to the next step, make sure to wash your hands and get all that raw chicken off of your hands.

It is time to prep your other ingredients and you don’t want to cross contaminate! We want a delicious dinner and not salmonella. After washing your hands you will want to cut the tomato into thin slices and put aside.

It is time to grab your yummy cheese. Everyone has a preference in cheese and this recipe allows you to choose your own cheese for the recipe. The person in the video uses a white cheese for their chicken dish. You will want to slice your cheese with the same width as your tomato slices.

You cannot go wrong with mozzarella, gouda, cheddar, or feta cheese.

You will also want to cut or separate your 1.5 tablespoons of butter into four different pieces. It is now time to put all these ingredients together!

Bring your two seasoned, but uncooked, chicken breasts back to your prep area and stack your butter (two pieces) on to each piece of chicken in the “pocket” you had cut. You will next put your tomato slices onto the chicken breasts. Lastly, you will the cheese slices on top of the tomatoes.

Once all the ingredients have been stacked into the chicken “pocket” you will close all the ingredients within the chicken breast as best you can. They will be stuffed to the max so using toothpicks to keep all the ingredients inside can be helpful if you need them.

After, go grab an oven safe baking dish, you are now done with all the “hard” parts.

Before laying the chicken in the dish, lather the bottom with olive oil. Once it is covered it is time to put the chicken in the baking dish and put it in the oven. Pour a bit more oil onto the chicken and add the spices to the folded chicken sides that did not previously get any.

You will cook the chicken for 25 minutes. A great time to put together any extra sides you would like to serve with the chicken. This recipe is quite filling so it can be served on its own too!

Ding! The 20 timer goes off and you have a delicious dinner right in front of you.
