These Salmon And Asparagus Foil Pockets Make Dinner Easy

Making homemade dinners every night can be a struggle. There’s the obvious challenge of preparing and cooking a meal, but beyond that there’s also going grocery shopping, developing a meal plan for the week and making sure everyone in the family will eat it. Because of the pressure (and sometimes, the expense) of cooking nicer meals for dinner, we often default to dishes that are cheaper and easier. But what if we could have the best of both worlds? What if we could have “fancier” dinners that were also simple and convenient to make?

As an example, we probably think of a seafood or a steak dinner as an indulgence and something that we can’t do every day. If we’re only focusing on the first part of that combination, when’s the last time you had a nice fish dinner that seemed easy to prepare? Today, we have a twist on a classic salmon filet with asparagus recipe that comes wrapped in its own foil package and ready for instant dinners—without sacrificing any of the flavor. Are you ready? Let’s begin.

Here’s what you’ll need:

  • 4 boneless and skinless salmon fillets
  • 1 pound of asparagus (with the ends trimmed)
  • 1 thinly sliced lemon (and wedges for garnishing)
  • 1/2 cup of room temperature butter
  • 3 teaspoons of Italian seasoning
  • 3 teaspoons of minced garlic
  • fresh thyme of parsley
  • salt
  • pepper
  • aluminum foil

Here’s what you do:

1. To start everything off, get your oven preheating at 400 degrees. Once you’ve got that set, start seasoning your salmon fillets liberally with salt and pepper on both sides. Make sure to prepare your asparagus spears at this stage as well by trimming their ends.

2. Once you’re ready, roll out some 12 x 12 inch sheets of your aluminum foil and put each piece of salmon in the middle with some spears of asparagus as well—do this four times. Make sure to slide a few slices of lemon underneath each helping of salmon and asparagus as well.

3. After that, get a small bowl and mix together your butter, Italian seasoning and garlic. Stir it well to combine and then drop a large scoop of the butter on top of each of your salmon servings.

4. With all the ingredients in place, wrap the foil tightly around the food and seal all of the ends together to prevent any leaks. When your oven is ready, throw your foil packets on a baking sheet and pop the entire thing in the oven for about 20 minutes. Alternately, you can also skip the oven and cook your foil packets on the grill if you have one handy.

5. After enough time has passed, take your foil packets out and make sure that they’re cooked enough. If everything looks good, drizzle each one with fresh lemon juice and garnish with some wedges of lemon and some fresh herb sprigs. If you’re not ready to eat yet, keep your pockets wrapped up in the fridge and cook them when you’re ready. Enjoy!

As you can see, having a delicious salmon dinner isn’t as much work as it may seem. By wrapping all the ingredients in single serve foil packets and popping them in the oven, each one basically cooks itself perfectly without any need for you to intervene or keep a close eye on them! And, of course, each one of these packets still tastes absolutely delicious.
