How often do you make dishes that are veggie heavy for dinner? If you’re anything like us, you could probably use a few more veggies in your diet—but you’re not always sure how to make veggie heavy meals that are as delicious as their meatier counterpoints. Still, sometimes the best of these recipes are actually the simplest to make. If you’re looking for one of these dishes to make, we have the perfect one for you to try out.
Today, we’re going to make a kielbasa veggie dinner that you can make on a sheet pan with very little effort. While it does use some sausage for some extra flavor, essentially all you have to do is throw your veggies in with it, season it and throw it in the oven. When it’s all said and done, you should have plenty of food leftover for your whole family. On the other hand, you could also bring this to a party! So let’s get started.
Here’s what you’ll need:
- 1 pound of baby red potatoes, chopped
- 2 cups of baby carrots
- 1 bunch of asparagus
- 1/2 yellow onion, thinly sliced
- 1 13-ounce package of pork kielbasa, sliced
- 1 tablespoon of minced garlic
- 1/4 cup of olive oil
- 1 teaspoon of dried basil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon of onion powder
- salt
- pepper
Here’s what you do:
1. To get started, preheat your oven to 400 degrees. Get out a baking sheet and line it with aluminum foil as well. In the mean time, get out a small bowl and throw in your basil, thyme, oregano, paprika, onion powder, salt and pepper. Stir it up well and set it all aside.
2. If you haven’t already, chop up your potatoes as necessary and drop them onto your baking sheet with your carrots. Drizzle them in two tablespoons of oil and sprinkle half of your herb mixture over the veggies as well. Be sure to toss everything up until it’s evenly coated and then pop it in the oven for 20 minutes.
3. After the time is up, move the veggies to one side of the sheet and add your asparagus, onion and kielbasa slices to the other side of the baking sheet. Drizzle all of that with one tablespoon of olive oil and toss them with the rest of your dry herbs and garlic. When you’re ready, pop it back in the oven for another 10 to 15 minutes.
4. After the time is up, take the tray out and make sure that the meat is cooked and all the veggies are nicely roasted. If everything looks good, serve it all up while it’s hot!
