This Rhubarb Berry Pie Is A Perfect Dessert For Summer

Have you ever eaten a rhubarb? If you haven’t, you’ve probably at least heard of them. If not, rhubarb stalks look very similar to celery except they have a somewhat sweeter and more tart flavor. Though technically a vegetable, they are often prepared like one would prepare a fruit. As a result, rhubarb is often used in a number of tasty desserts, particularly in the Southern United States. And we’re bringing one of those recipes to you today.

Even if you’ve never had it before, rhubarb can a delicious ingredient in many a dessert. Today, we’re going to make a berry rhubarb pie that families have been making for years. After baking, the inside will be perfectly soft and delicious and the flavors will combine to make some truly exquisite sweetness. This is a recipe you’ll be coming back to again and again—so let’s get started.

Here’s what you’ll need:

  • 1 cup of all-purpose flour
  • 3/8 cup of butter
  • 2 cups of freshly chopped rhubarb
  • 4 cups of berries (your choice)
  • 1 1/2 cups of brown sugar
  • 4 tablespoons of cornstarch
  • 2 teaspoons of mixed lemon juice and zest
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of allspice
  • 1 teaspoon of vanilla extract
  • 1 egg
  • 2 pinches of salt

Here’s what you do:

1. To get started, preheat your oven to 425 degrees. After that, get a large bowl and pour in your flour along with your butter, cut into little chunks. Add in a pinch of salt and rub the butter into the flour with your fingers until it all comes together to form breadcrumbs.

2. Add a little bit of cold water to the mixture so that it turns into a firmer dough. Pour some flour down on a surface and work your dough together over it gently so that it comes together. Once it looks good, wrap the dough and chill it for a half hour at least. Once it’s cool, roll out half of the dough to make the bottom half of your pie crust by pressing it into a greased pie tin.

3. In another bowl, mix together your rhubarb, berries, sugar, cornstarch, lemon and the other flavorings (including the other pinch of salt). Be sure to mix everything thoroughly so that it’s all evenly combined before pouring the mixture into your pie tin.

4. Take out the other half of the pie dough and roll it into a cover for your pie. Make sure to make it large enough that there’s plenty of dough overhanging the edges. After that, trim the excess and press the edges together so it all seals up.

5. Next, crack your egg and beat it with a fork in a side bowl. Use a pastry brush to put an egg wash on top of the dough so that it will glaze up in the oven. Put one small hole in the top of the pie so that steam can escape during baking as well.

6. Pop the entire thing in the oven and let it cook for about 15 minutes. At that point, turn the heat down to approximately 375 and leave the pie inside until it all turns golden brown (for about 45 minutes). Once it cools, slice it up and serve with some ice cream!
