Ingredients (serves 6):
- 2 tbs water
- 4 large sweet potatoes
- 1 cup brown sugar ( divided )
- 1 cup white sugar ( divided )
- 2 tsp. salt (divided)
- 2 tbsp. vanilla
- 1 tbsp. cinnamon
- 1tsp. nutmeg ( optional )
- 1/2 stick butter ( cut into cubes)
Step 1) Peel and slice your sweet potato up. You can use thick or thin slices, depending on your preference. Rinse and pat dry with a paper towel.
Step 2) Pour 2 tbsp. of water into a medium-sized pot. This will prevent your yams from burning. Your recipe won’t come out right if you use too much water or if you bake your yams.
Step 3) Pour in half of your sweet potatoes.
Step 4) Cover your sweet potatoes in the pot with half of your brown and white sugars. Toss in half of your salt.
Step 5) Place the other half of your sweet potatoes on top of that.
Step 6) Place the rest of your sugars and salt over those potatoes.
Step 7) Add in your cinnamon, vanilla, and nutmeg.
Step 8) Turn your stove to medium-low heat and cover your pot only halfway with the lid. It’s important to make sure steam can get through. If not, you’ll end up with a stew. Let cook for 10 to 12 minutes.
Step 9) Take your lid off and flip only the top sweet potatoes over and push them down into the sugar syrup in your pot. Just flip over and press them down.
Step 10) Cook for another 10 to 12 minutes until they are tender. Do not touch or mix.
Step 11) Remove your pot from the heat and let your pot cool a bit so that the bubbling sugar settles.
Step 12) Place your butter cubes throughout the top of your pot and cover with a lid, so it melts.
Step 13) Once your butter is melted, your yams are ready to enjoy.
