Ingredients

For the crust or crumb mixture, you’ll need:

  • 1 cup (125g) all-purpose flour
  • 1 cup (100g) rolled oats
  • 2/3 cup (135g) light brown sugar
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 1/2 cup (113g) unsalted butter, room temperature
  • Zest from a lemon 1 tsp (5g) vanilla extract

For the filling:

  • 1 pound (450g) Greek yogurt
  • 2 tbsp (30g) sugar
  • 2 tbsp (16g) cornstarch
  • 10 oz (300g) fresh raspberries

How to make the yogurt bars.

1. Start off by preheating the oven to 350F (180C). This is to make sure that your oven is hot and ready to go when you’ve finished assembling the bars. No time is wasted and you’ll be able to enjoy your raspberry yogurt bars that much faster.

2. Add brown sugar and lemon zest to a mixing bowl. Mix and rub them together to release the oil from the zest.

That’s definitely going to add more flavor to your bars!

3. Add flour, oats, baking powder, and salt to your bowl. Then add the butter and vanilla. Mix everything together until they’re all crumbly.

Once you’re done with this step, scoop out about a cup of the mixture and place it in a different bowl. You will use this for the topping.

4. Get an 8×8 inch (20x20cm) square pan, lined with parchment paper and grease it. Make sure that you have an extra inch of parchment paper coming off the top to make the entire baked bar easier to lift off the pan after baking.

5. Press the big batch of crumb mixture onto the pan to form its base.

Feel free to use your hands or a spatula to smoothen out the mixture on the pan to create an even base for your bar.

6. In another bowl, add the Greek yogurt, cornstarch, and sugar. Mix until the all ingredients are combined together.

7. Transfer the yogurt mixture on top of the crumb mixture. Just like what you did earlier, use a rubber spatula to smoothen out the yogurt mixture and flatten it out.

8. Spread the fresh raspberries over the yogurt. Make sure that every inch is covered with raspberries.

9. Sprinkle the rest of the crumb mixture on top of the raspberries.

10. Bake the yogurt bar for 40 to 45 minutes or until it becomes lightly browned. Once it’s done, place it in the fridge for about two hours.

11. When it’s done, lift up the bar from the pan using the excess paper on top. Cut into squares nine squares or smaller.

Make sure to keep the rest in the fridge if you’re not going to eat it yet. Best served with a cup of coffee or tea.
