It’s quick and easy and uses simple ingredients you already have in your home.
And it only uses one egg.
Are you ready for the only pancake cake recipe you will ever need in your life?
Here’s what you’ll need:
- 2 big apples, peeled, cored, and sliced
- 2 tbsp butter
- 2 1/3 tbsp + 2 1/3 tbsp sugar
- 1 egg
- 2 tsp vanilla sugar
- 2 tbsp sunflower oil
- 1/2 cup + 1/2 tbsp yogurt
- 1 cup all-purpose or plain flour
- 1 3/4 tsp baking powder
- 2 tsp cinnamon powder
They’re very simple ingredients, right?
And you don’t need an oven to bake this cake. All you need is a pan and a cooking stove.
Take out a medium-sized pan and heat the pan over medium heat. While waiting for the pan to heat up, peel the apples and slice them into thin pieces.
When the pan is warm enough, add the butter and let it melt with 2 1/3 tbsp of sugar. Mix them together until everything has melted and dissolved.
Add apples and simmer 10 minutes.
Meanwhile, in a bowl, add one egg, the remaining 2 1/3 tbsp of sugar. Add vanilla sugar, too. Whisk until mixed well and it starts to thicken up.
Add the oil and whisk again.
Add the yogurt and mix again.
Use a strainer or sifter to sift the flour and baking powder before adding them to the mix.
Sifting will help avoid clumps and allow your dry ingredients to aerate.
Whisk the flour with the egg mixture until it reaches a pancake batter-like consistency.
Check apples again.
Make sure all the slices are evenly cooked. Add the cinnamon powder to the apples and mix so all the apples are covered with the cinnamon.
Pour batter on apples.
Keep over heat. Use your spatula to cover all the apples with the batter.
Once that’s done, cover with a lid and let it simmer for ten minutes. After the time is up, use a toothpick to check if the batter is still wet.
Brush a plate with oil or butter and transfer the cake onto the plate. Place the cake back on the pan but flipped with the cake batter on the bottom part.
Greasing the plate will make sure that the cake won’t stick to the plate when you transfer it back to the pan.
Cover again
Let it cook for another five minutes.
