Broth from livestock such as chicken, pork, or beef has been part of our kitchen for many years.

But not all broths nowadays are pure natural.

Today, we’re going to show you how to create vegetable broth from fresh vegetables as shared by the Youtube Channel “Healthy Recipes.”

It’s better than “Better Than Bullion”.

Can you guess the ingredients?

That’s right, an assortment of your favorite veggies.

For this recipe, we’ll use:

  • 3 Carrots
  • 1 Leek
  • 2 Parsnips
  • 2 Parsley bunches
  • 1 Onion
  • 2 Garlic
  • 1/2 of Kohlrabi
  • 1/2 of Celeriac and its leaves
  • 1 Turmeric
  • A handful of fresh Parsley leaves
  • Sunflower Oil
  • 80 Grams of Salt

Start by preparing a big bowl to place all the ingredients.

Slice ingredients as small as possible.

In the video, carrots are the first to be chopped, but you can always change up the order.

Peel the skin of the carrots then cut lengthwise twice.

Slice them into smaller pieces. Put them in the bowl.

Next, we’ll cut the Leek.

Remove the root and the tips of the leaves. Slice it in half, lengthwise, then cut it into thin slices. Include the leaves.

Now get the Parsnips and do the same cuts as we did with the carrots.

Next is to cut the roots of the Parsely. Skin them before cutting them into smaller slices.

Up next is the Onion.

Get a whole white onion and cut it in half. Then slice it into smaller strips. For Garlic, we just need two cloves, but more is always welcome, of course.

Slice them in half, no need to mince them.

Kohlrabi is the next ingredient, we will only use half of it. Remove the skin before slicing it into small cubes.

Next, we get to use only half of Celeriac and its leaves. Remove the roots and skin. Remove the stalk of the leaves as well.

Cut the root into smaller cubes and slice the leaves as thin as possible.

Next to be cut is Turmeric.

You will need to use gloves for this. Remove the skin and cut the same way as the carrots.

Lastly, get your handful of Parsley leaves and cut them as small as possible.

Prepare a Non-Stick Pan and pour in a considerable amount of Sunflower Oil on medium heat.

Place all the cut ingredients and stir. Add salt to the mix. Stir again until salt is incorporated.

Continue mixing and frying until the juice comes out.

Cover it for 8 minutes or until they are tender. Remove the cover and continue to stir.

Remove from heat and put them back into the bowl using a mesh strainer.

Use an immersion blender to create a consistent mashed mixture.

Prepare a baking pan and place tissue paper or wax paper as a lining.

Pour the mashed mixture evenly into the baking pan using a spatula. Allow it to cool for a little bit before covering it with cling wrap.

Chill in the freezer overnight.

Remove the baking pan from the freezer, and place the frozen block of broth into a chopping board.

Cut them into smaller cubes and wrap them using aluminum foil.

Now your bullion is ready to go.

Repack them using Ziploc bags so you can store them for longer periods of time.
