The ingredients:

  • 750 grams or 3 chicken tenderloins
  • 1 red pepper
  • parsley
  • 4 cloves of garlic
  • 1 teaspoon or 8 grams of salt
  • 1 teaspoon or 2 grams of mint
  • 1 teaspoon or 2 grams of curry
  • 2 teaspoons or 4 grams of paprika
  • 1 teaspoon or 2 grams of black pepper

For the filling:

  • 250 grams or 3 potatoes
  • 250 grams or 3 carrots
  • Half a teaspoon or 4 grams of salt

  • 1 teaspoon or 2 grams of mint

For the sauce:

  • 1 teaspoon or 20 grams of tomato paste
  • 1 teaspoon or 8 grams of salt
  • 3 tablespoons or 30 ml olive oil
  • 1 cup or 200 ml hot water
  • 100 grams of cheddar cheese (preferably mozzarella)

The process is simple.

Once you’re ready, let’s start off by removing the skin of your chicken breasts and then cutting them into cubes.

Chop pepper and parsley leaves.

Get your food processor and put pepper, four cloves of garlic, and chopped parsley.

Grind and set aside into a large bowl.

Put your chicken bits into the food processor and mince. Then mix it with your vegetables.

In your chicken and vegetable mix, add salt, mint, paprika, black pepper, and curry. Mix well and cover with cling wrap.

Refrigerate for at least an hour.

Wash and peel your potatoes and carrots.

Boil, but don’t cook all the way.

Once they are cool to the touch, you can start grating them alternately.

Then add salt, paprika, black pepper, mint, and mozzarella cheese.

In a bowl, combine the tomato paste, salt, and olive oil.

Then add your water. Mix really well and pour into your bowl along with the meat veggie balls.

Bake at 355℉ for 30 – 35 minutes.

Take it out, drizzle mozzarella, and then proceed with the second baking.

Bake for 10 minutes more at 355℉
