If you’re looking for a snack that’s filling, you can try this Cheesy Stuffed Potato Bread.

It’s really simple!

You can make the dough first. Here are the ingredients:

  • 1 Egg (placed at room temperature)
  • 1/3 cup warm milk
  • 1 tsp instant dry yeast
  • 2 tbsp sugar
  • 1 ½ cup bread flour
  • 1 tsp salt
  • 5 tbsp unsalted butter (melted)

Beat the egg and milk together in a bowl.

Then, add the yeast and sugar and continue mixing. Pour in the flour and salt, and fold the mixture until all the wet ingredients are absorbed.

Here, you can start kneading it with your hands.

Continue kneading until the dough is smooth.

Pour in the melted butter and continue kneading until the dough completely absorbs it. Smoothen it out and form the dough into a ball.

Place it in another bowl, cover in cling wrap, and let it rest. Place it in a place with temperatures around 96 – 102 degrees Fahrenheit for an hour.

While waiting for the dough to rise, you can start making the stuffing.

For the potato stuffing, you will need the following:

  • 2 large potatoes (weight half a pound each)
  • 2 ¾ tbsp. heavy cream
  • Salt
  • Pepper
  • 1 cup grated mozzarella cheese

Peel the potatoes and slice them into smaller pieces.

Boil the potatoes until they’re soft. Once done, place them in a bowl, add three pinches of salt, pepper, and mash them. Add the heavy cream and mix until the potatoes are soft and smooth.

Get the dough. You’ll see its size has grown almost double since an hour ago.

Divide the dough into two equal parts. Set one aside for later. Start kneading the other one, sprinkle a bit of flour, and flatten it using a rolling pin.

This dough is the base of your bread, and it should be around 9.5 inches.

Place the dough on a baking pan lined with a baking sheet.

Scoop the mashed potatoes and spread them all over the dough. Leave some room at the edges. Add the mozzarella cheese on top to complete your bread’s stuffing.

You can also add sweet corn and green onion if you want.

Grab the other half of the dough and do the same process.

Flatten it out to the same size as your base dough. Place it on top to cover the stuffing. Press the edges to seal the dough, and tuck in the edges to make them look tidy.

Cover with cling wrap and let it rest for 10-20 minutes.

After 20 minutes, remove the wrap and brush the top with some milk before baking.

The milk will create a nice golden color and a little crisp on your bread. You can apply a bit of pressure at the top to press tiny holes in your dough. (Don’t poke it all the way through, though.)

Bring the pan to a pre-heated oven of 320 degrees Fahrenheit.

Bake for 30 minutes or until the bread is golden brown. Take it out of the oven and brush some melted unsalted butter on top to add flavor. You can also sprinkle some chopped parsley on top of the bread.

Slice and serve this beautiful and perfect snack.
