Get a taste of this Turkish Delight!
This sweet treat is also called Lokum, which is popular in Turkey. First produced in the 15th century, people grew to love this Turkish candy because it’s sweet, tasty, and chewy – a perfect treat indeed! It can come in different flavors; some add nuts and use other coatings to it.
This Lokum recipe is for the plain variety, which leaves room for your choice of flavor.
Here are the ingredients:
- 4 cups White sugar
- 4 ½ cup Water
- 2 tsp Lemon juice
- 1 ¼ cup Cornflour (or corn starch)
- 1 tsp Cream of tartar
- 1 tsp Vanilla essence
- 1 tsp Food color
- ½ cup Powdered sugar
Pour the sugar, 1 ½ cup water, and lemon juice into a saucepan.
Place the pan on the stove at low heat. Stir the mixture consistently. Bring this mixture to a boil and keep on stirring. Keep doing this until its consistency thickens into a sugar syrup.
Here’s a brilliant tip to know if it’s in the right consistency.
Get a cup or a small bowl of cold water. Drop around half a teaspoon of the syrup into the cold water. If it solidifies, then that’s the perfect consistency. Once you achieve this, turn off the stove, take the pan out of the stove, and set it aside.
In another saucepan, mix 1 cup of flour, cream of tartar, and the remaining 3 cups of water.
Mix and make sure it doesn’t form any lumps. Once it is adequately mixed, place the pan on the stove at medium heat. Stir constantly until it thickens and make sure there are no lumps.
Turn the stove into low heat and gradually pour the sugar syrup.
Continue to pour portions of the syrup, and remember to continue stirring to maintain its consistency. This may take time, but we promise it’s going to be worth it!
Once you poured all the syrup in, continue mixing.
Put it to a boil. You may take pauses in stirring, but just make sure you stir the mixture frequently, especially when you notice that they’re starting to form lumps.
Continue doing this until the mixture turns golden brown.
You can do this at a 15-minute interval and stirring it now and then. Around 45 minutes, it starts to get yellowish or golden. Give it a few more minutes until you achieved the perfect color.
Turn off the heat and add a teaspoon of vanilla and food color.
Alternatively, you can use rose water instead of vanilla. It all depends on how you want your Lokum to smell and taste. Mix the ingredients well until the food color is evenly distributed.
Take any mold, apply oil on its surface, and line it with parchment or baking paper.
Pour the mixture into the mold. Spread it evenly so your Lokum will be equally thick. Let it sit in the fridge overnight. When you’re Lokum is set, it’s time for the finishing touches.
Mix the powdered sugar and the remaining ¼ cup of cornflour into a bowl.
Sprinkle a bit of this mixture into a clean surface. Take the jelly out of the mold and place it on the surface with the powdered sugar mixture. Cut them into even cubes with the use of a pizza cutter or knife.
Place all the slices into the bowl of powder sugar.
You can coat the slices individually or toss them all in the bowl until they are evenly coated.
Place on a plate to serve, or store in a jar inside the fridge to eat later.
