From whip cream to warm maple syrup – there’s no wrong way to eat a pancake. In fact, you can even give them a tropical twist…

Tasty shared a recipe for these yummy, island-style pancakes, which will add some extra pizazz to your morning. I mean, a breakfast food that incorporates the elements of a classic pineapple dessert? Count me in.

Below’s what you’ll need to make Pineapple Upside Down Pancakes and pineapple syrup. (Serves 4-5)

Ingredients:

  • 2 cups flour
  • 2 tsp. baking powder
  • 1 ½ tsp. baking soda
  • ½ tsp. salt
  • ¼ cup sugar
  • 1 ½ cups milk
  • ½ tsp. vanilla extract
  • ½ cup butter (divided) (also, additional needed for frying)
  • ¼ cup brown sugar
  • 1 ½ fl. oz. spiced rum (optional)
  • 20 oz. can of pineapple rings with juice (approximately 1/2 cup juice after being separated from fruit)
  • maraschino cherries

Step One:

Put the flour, baking powder, baking soda, salt, and sugar into a large bowl. Stir until all of the ingredients are nicely combined.

Step Two:

Form a “small well” in the center of the dry ingredients – then add in the milk, 1/2 of the pineapple juice, 1/4 cup butter (melted), and the vanilla extract. Stir until mixed, creating a lump-filled batter. Now, set this bowl aside.

Step Three:

Time to make the heavenly pineapple syrup! Place the rest of the butter (1/4 cup) in a small saucepan and set on medium heat. After the butter’s melted, add your brown sugar, the rest of the pineapple juice, and the rum (which is again optional). Whisk them together.

Step Four:

Allow your ingredients to come to a boil so the sugar can caramelize. Mix (while keeping it on medium heat) until you get a smooth, syrup-like consistency. Remove and set aside.

Step Five:

Ready to cook the pancakes? Add a small pat of butter to a frying pan that’s over medium heat. Once it’s melted, place a pineapple ring in the pan.

Cook until the bottom of the ring is “lightly caramelized” according to Tasty, (approximately two minutes), then flip it.

Step Six:

Place 1-2 cherries inside of the pineapple ring. Next, pour approximately 1/4 cup of batter on top, creating a pancake. As you’ll see in the photo below, the batter should spread out past the ring.

Step Seven:

Let the pancake cook until the top starts bubbling and the edges begin to set (approximately 2 minutes). Then, flip the pancake over. You’ll be able to see the pineapple ring and cherries!

Finally, let the pancake cook for about 90 seconds – 2 minutes (or until it’s all the way cooked).

Step Eight:

Keep the pancakes warm in a 200-degree Fahrenheit oven until you’re ready to serve them. Top with the homemade pineapple syrup and prepare for all the cheers!
