Breakfast is the most important meal of the day, but who has time to cook up a healthy hearty breakfast when you’re trying to get dressed and get out the door?

You can avoid that morning hassle by tossing some ingredients into a slow cooker and letting it cook overnight.

You’ll wake up to a delicious gourmet breakfast that you can scoop in a bowl before you leave the house. How does some warm cranberry maple oatmeal sound?

This recipe has thick chunks of fruit, almonds, and oats that are oh so satisfying and packed with vitamins and nutrients.

Here’s how to make it:

Cranberry Maple Oatmeal

Ingredients:

  • 1 cup steel-cut oats – $0.70
  • ¾ cup dried cranberries – $0.95
  • ⅓ cup shaved almonds – $0.67
  • 2 peeled and small diced pink lady apples – $1.72
  • 4 tablespoons brown sugar – $0.16
  • ½ teaspoon cinnamon – $0.05
  • ½ teaspoon vanilla extract – $0.14
  • 4 cups water – FREE
  • 1 tablespoon butter – $0.12
  • 4 tablespoons maple syrup (to serve) – $1.33=

Total Cost: $6.29; Cost Per Serving: 4 servings at $1.57 per serving

Total Time: 8 hours and 5 minutes; Prep Time: 5 minutes

Directions:

Step 1) Peel and dice your apples into little square chunks.

Step 2) Toss your oats, cranberries, almonds, apples, sugar, cinnamon, vanilla extract, water, and butter in slow cooker. A 6-quart slower cooker is best for this recipe. Mix everything up well with a spoon.

Step 3) Cover your slow cooker and set it on low for 7 to 8 hours and let it cook overnight.

Step 4) Take off the lid and mix everything up well.

Step 5) Scoop into a bowl or a mug and drizzle some maple syrup over the top. You can sprinkle some extra almonds, cranberries, and or oats on top for an extra crunch. Serve and enjoy!

Step 6) If you want your oatmeal to be extra fancy with a crispy crunch, you can pour your oatmeal into an oven safe dish. Next, you’ll want to sprinkle some granola or leftover oats and/or almonds into some maple syrup or honey. Place the mixture on top of your oatmeal and place it into the oven at 350 degrees Fahrenheit for 15 minutes until it becomes crispy on the top.
