If you love chicken thighs, then youâll want to try this recipe as soon as you can.
Letâs check it out.
You will need:
- 5 chicken thighs
- 1 teaspoon oregano
- Salt
- Black pepper
- 4-5 medium-sized potatoes
- 7-8 small carrots
- 2 tablespoons olive oil
- Butter
- 1 onion
- 4 large cloves of garlic
- A handful of chopped parsley
- ~1/3 cup of honey
- 1/3 cup plus 1 tblsp. sweet chili sauce
- 2 tablespoons lemon juice
- 3 tablespoons soy sauce
- 3/4 tablespoon Dijon mustard
To make:
Step 1. Prepare the chicken thighs and add salt, pepper, and oregano. Then flip the chicken thighs and repeat the process on the other side.
Step 2. Massage the chicken until they absorb the seasonings.
Step 3. Wash and peel your potatoes. Cut them into cubes. One potato would turn into 12 cubes. Set them aside.
Step 4. Clean and peel your carrots and cut them diagonally.
Step 5. Crush and chop your garlic cloves. Crushing the garlic before chopping it releases more aroma.
Step 6. Wash and then chop your parsley.
Step 7. Heat your skillet and add olive oil and butter. Sear your chicken thighs. Make sure that you get that golden crispy side and then flip it to cook the other side.
Step 8. Chop your onions and set them aside, along with the other ingredients.
Step 9. Once your chicken has been seared, set them aside. Donât turn off the heat.
Did you know that by searing the chicken, youâre locking in the meatâs natural juices?
Step 10. Sauté the onions. Once they are almost translucent, add your potatoes, and carrots. Continue to sauté.
Step 11. After a few minutes, add your parsley and garlic. Allow them to cook.
Can you smell it now?
Step 12. While thatâs cooking, heat another skillet. Add honey, sweet chili sauce, soy sauce, and Dijon mustard. Cook until thick.
Step 13. Add the chicken to the first skillet along with the potatoes and carrots. Then pour your sauce.
Step 14. Preheat the oven to 390â.
Place your skillet and Cook for 25-35 minutes at 390â top/bottom heat.
What we love about this dish is that it’s sweet, savory, and filling. Aside from that, you can choose different side dishes or eat them with rice too.
Do you think this would work well with chicken breasts too?
